Cheesy Potato Beef Bake (from www.recipezaar.com)

Ingredients
1 lb ground beef , cooked and drained
2 (4 ounce) cans mushroom stems and pieces , drained (optional)

2 (5 3/4 ounce) packages au gratin potato mix

4 cups boiling water
1 1/3 cups milk
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese

Directions
1 Place ground beef in a greased 9x13 baking dish and top with mushrooms.
2 Combine potatoes and contents of sauce mix packets, water, milk, butter, salt, seasoned salt and pepper. Pour over beef and mushrooms.
3 Cover and bake at 400 for 30 minutes or until heated through.
4 Sprinkle with cheese and bake, uncovered for 5 minutes or until cheese is melted.
5 Let stand 10 minutes before serving.

Au Gratin Beef Bake

1 pound ground beef
1 large onion, chopped
2 celery ribs, chopped
1/2 cup chopped green pepper
1 (5.5 ounce) package au gratin instant potato mix
1 (10.75 ounce) can condensed tomato soup, undiluted
1 teaspoon Worcestershire sauce
1 3/4 cups water
2/3 cup milk

In a large skillet, cook the beef, onion, celery and green pepper until met is no longer pink and vegetables are tender; drain. In a greased 2-1/2-qt. baking dish, combine beef mixture, potatoes with contents of sauce mix, soup and Worcestershire sauce. Stir in the water and milk. Bake, uncovered, at 400 degrees F for 45-50 minutes or until potatoes are tender.

I brown the ground beef and drain it well then add it to the Au Gratin potato that has been prepared according to the package directions and cook as directed. I make this often as it really extends the ground beef. I have also added peas, corn or mixed veggie to the potato mixture before baking it. It is very tasty.

1-Box of Au Gratin Potatoes
1-bag of shredded cheddar cheese OR you can shredded it yourself (2 cups)
2 1/4 boiling water
2/3 cup milk
1/2 lb or more of hamburger
1 cup of crushed tortilla chips

Oven 400*. Cook and drain your hamburger. Stir together potatoes, sauce mix, water and milk into a 2-qt casserole dish. add meat and 1/2 the cheese. Bake covered for 30 minutes or until potatoes are tender. Top with remaining cheese and bake until melted. Let stand a few minutes before serving. Sprinke with chips and enjoy.
