When you put roux balls in the oven do they rise or do they stay the same size?!
Answers: They will rise. When they are cooked stick a knife into the side of them to let the steam out and return to oven for a minute or two. This way they wont be soggy inside.
Assuming you mean choux balls as in profiteroles. They should rise by approximately 50% due to the air beaten into them whilst mixing.
