How do I make risotto rice without adding diary products? I've only ever eaten twice in my life.?!

There is no need to use dairy, use a good vegetable or chicken stock to cook the rice in, add whichever vegetable or meat you wish and just avoid cheese and you should be fine.

Alternatively use wine instead of stock for a grown up version!

use dairy products... no need for ripping pages out of ur "diary" ha ha

use coconut milk or ricedream soy milk

I don't usually put milk in it any way, I use chicken stock. So just leave out the cheese. Have a look on www.mydish.co.uk, they will have some good ideas.

The only dairy in risotto is parmesan cheese and you can buy dairy free cheese from health food stores although you can completely omit the cheese but add an extra grind of pepper for flavour.

To make risotto you use a stock (veg or chicken), but def. no milk or cream. The creamyness actually comes from the rice when it cooks.

Or use soya milk. Can't say I've ever heard of putting milk in risotto anyway.
You don't have to put cheese in it, there's no law of risotto. I often leave it out as although I love cheese it can cause me some problems.

Add wine for a nice flavour. The alcohol gets cooked out and you are just left with the flavour so it's still ok to feed the children on.
Risotto is a really easy dish to cook, so don't let it fluster you.

For other lactose free recipes try using a vegan cook book, they don't use dairy products at all and you can always alter them to include meat or fish if you east it.

well it's usually just stock, but adding loads of butter to make it creamy, if your son can't take the butter use oilive oil spread or just a dashof olive oil at the end

Nobody in Italy makes risotto with dairy products. Get on the net and look up recipes. Risotto is made with wine.

Risotto rice is not cooked with any dairy foods at all. It's cooked in veg or chicken stock with a splash of wine added if liked.
Grated parmesan cheese may be added to the top when served but not essential.
