Tilapia side dish?!


Question: I am having tilapia with lemon butter sauce for supper, what would be a good side withh this? I would like to make a pasta with light sauce. Can anyone help me?

1/4 c. olive oil
1/4 c. chopped fresh parsley
4 cloves garlic, finely chopped
1/2 c. freshly grated Parmesan cheese
Freshly ground pepper
Cook pasta as directed on package. Meanwhile, heat oil in 10 inch skillet over medium high heat. Saute parsley and garlic in oil. Drain pasta and mix with garlic mixture. Top with cheese. Serve with pepper.

spiced olive oil drizzled angel hair , yum !

wild mushroom rice would be really good.

i put a salad and with basmati rice on the side. For the salad I use diced cucumber, bell pepper diced, tomato diced, fresh avocado diced, a quick shake of garlic powder, 2-3 tbsp vinegar, salt and pepper to taste. Sounds strange since it doesn't have lettuce, but trust me, once you start eating them, they will be the only food you want to eat all summer long. They taste great with the tilapia.
