Mac and Cheese made with cheese ends?!


Question: Has anyone ever made mac and cheese with cheese ends (assorted cheese leftovers from the deli)? I remember my dad making it this way when I was a kid cause he loved different kinds of cheeses. Any tips on making it with cheese ends?

Yes, I use to make it too. I could buy the cheese ends cheap and freeze them for future use.

I cook up two pounds of elbow macaroni as directed on packages. Set aside.

1 tsp salt,1 tsp ground black pepper, 1 large onion minced fine, 1/2 bell pepper minced fine, 1stick of celery minced fine,1 stick of butter (can use margarine).

Saute' all of this until cooked. Add 4 cups of milk, stirring constantly, add cubed of cheeses of your choice (at least two pounds). Stir constantly until cheeses melt and the milk becomes a sauce.

Stir in the pasta. Put in a roasting pan. Take another pound of assorted cheeses that are cubed up, and press some down into the pasta and cheese in the pan. Leaving the cubes at all different levels in the pan...including some on top.

In a skillet: Melt 1 stick of butter or margarine, add 1 tsp garlic powder... Take some dry bread you crumbed in the blender (at least 3 - 4 cups) stir into the skillet with butter mixture. Cook and stir until you have garlic toast crumbs... let cool.

Put the flavored crumbs on top of the Mac & Cheese. Put in the oven and bake at 350 degrees for 30 minutes.

Cheese is cheese, once melted, no one will ever know that it was the ends of the cheese. Just make sure all pieces are close to the same size so they melt evenly. Yum!

This is my recipe for baked Mac & cheese.....I think it would be great to have a variety of cheeses.

1/12 cups uncooked macaroni
4 T butter
3 T flour
1 T dry mustard(optional)
1t salt
1/2t pepper
3 C milk
1 egg beaten
11/2-2 C sharp cheddar

Prepare macaroni as directed drain and set aside
melt butter in pan ,add flour ,mustard,salt and pepper.stir and cook over low heat for 1 min....slowly add milk .continue cooking until milk is hot....slowly add about one cup of the hot milk into the beaten egg,,,,then return mixture to the hot milk,,,,continue stirring until it begins to thicken...remove from heat add cheddar cheese.stir until cheese is melted.
Add prepared macaroni.combine...top with cheddar and 1 cup buttered crackers
