What's a good substitute for fenugreek leaves?!

Fenugreek is often the primary ingredient in many curry powders, so you may be able to use some of them. It has a flavor similar to maple syrup, though not quite as sweet, so you could cut a small amount of that with some vinegar and get a close facsimile.
It is a hard spice to find in the US, for some reason. If you have an Indian market in town, you could look there.

In the summer when I can get them fresh I use some in my Paneer and Saag dishes, I am a former chef and a good alternative is either spinach and kale, or the american collard greens with a bit of dried or powdered Methi in the mix. I shred them so they cook faster.

Any leafy green is fine, a bit of extra garam masala will give you a similar flavour, I buy dried fenugreek and crush it in my mortar and pestle will a few whole cumin seeds also with a cardamon pod or 2.
