Cheesy Broccoli?!
Answers: My mom used to make it all the time, just broccoli and cauliflower in cheese sauce. If I just throw the cheese sauce and broccoli in the pot and heat it up, will the broccoli become tender? Or do I have to steam it first?
You should steam it, or you could blanch it first. To blanch, bring a large pot of salted water to a boil and throw in the broccoli for about 3 minutes, then drain the broccoli and run under cold water, to retain bright green color. Then add it to the cheese sauce.
Steam the broccoli, and then pour the cheese sauce over it
you want to steam the broccoli first, to get it tender and crisp.
you then add the cheese until it melts.
I like to steam mine first..Never tried just throwing it all together.
You need to cook the broccoli or cauliflower 1st then add your cheese sauce when it is cooked to your own personal taste.
steam it first so the cheese doesnt burn while the brocoli gets tender just steam until its half tender when it is half tender add the cheese so the brocoli gets done cooking and the cheese is melted YUM

I like to use precooked broc and cauliflower - otherwise the sauce gets runny and watery.
great recipe... just had it for dinner tonight:
boil cauliflower in salted water, add cream and some grated swiss cheese, salt pepper, nutmeg, mix together and put in oven for about 30 minutes, until crispy.... you'll never believe your tastebuds!
That is quite yummy.
Okay so here's how you do it.
Pour water in a pot, and then toss in your broccoli's and cauliflower.
Once it's pretty tender, then strain the broccoli's/ cauliflower.
Put in a bowl and spread cheese sauce on top :)
