This question made me homesick. I cannot make cheesecake here in Thailand for a variety of reasons but used to be famous for my cheesecake; and I am sorry I don't have any of my favorite recipes to share; but i looked up on all recipes..this one call, "world's best cheesecake on earth" and generally this sounds good..(lots of cheese)..best wishes; use a good springform pan...makes a difference...and think of me when you have a yummy slice!


world's best cheesecake on earth

INGREDIENTS
1 1/2 pounds ricotta cheese
16 ounces cream cheese
1 cup white sugar
6 eggs
6 tablespoons all-purpose flour
1 cup sour cream
1 teaspoon vanilla extract


DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C.) Wrap the outside bottom of a 10 inch springform pan with foil to prevent water seeping in while baking.
Cream together ricotta cheese, cream cheese and sugar until smooth. Mix in the eggs one at a time. Add flour one tablespoon at a time, mixing well. Stir in the sour cream and vanilla. Pour mixture into a 10 inch springform pan.
Place cheesecake in a large rectangular pan filled with 2 inches of hot water. Carefully put into preheated oven without spilling water. Bake for 90 minutes.
After 90 minutes turn oven off, but leave the cake in the oven for another 60 minutes (do not open door).
Cool on counter for 60 minutes and then refrigerate. Serve when thoroughly chilled.

PS note from me:: make sure you completely chill it; say overnight. Follow directions carefully...it will be worth it

cream together 2 8 oz packs of cream cheese with 2 eggs,3/4 cup sugar,1 tsp vanilla and 1 tbsp lemon....pour into a graham cracker crust.bake for 1/2 hour at 350.... remove from oven add topping and bake another 10 mins

8-Minute Cheesecake

1 (8-ounce) package cream cheese, softened
1/3 cup granulated sugar
1 (8-ounce) container sour cream
2 teaspoons vanilla extract
1 cup non-dairy whipped topping
1 (9-inch) graham cracker pie crust
1/2 pint strawberries, hulled and sliced
In a large mixing bowl beat cream cheese until softened; gradually add sugar. Blend in sour cream and vanilla until well mixed. Gently fold in non-dairy whipped topping, blending well.
Spoon into prepared graham cracker crust and chill. Garnish with sliced strawberries.

Creamy Cheesecake

1 cup graham cracker crumbs
3 tablespoons granulated sugar
3 tablespoons butter or margarine, melted
3 (8-ounce) packages cream cheese, softened
3/4 cup granulated sugar
2 tablespoons all-purpose flour
3 tablespoons lemon juice
3 large eggs
1 cup plain yogurt
In a small bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted butter. Mix well and pat onto the bottom of a 9-inch springform pan.
Preheat the oven to 350°F (175°C).
In a medium bowl, beat together softened cream cheese, 3/4 cups sugar, and flour until fluffy. Add lemon juice, and eggs; beat well. Stir in yogurt and mix thoroughly. Pour over the prepared crust and bake for 60 to 70 minutes, or until the center is set. Run a knife around the edge of the pan, but cool completely before removing the rim. Chill.

that one is really good if you're looking for a traditional cheesecake, and you can top it with anything.

there are many recipes at this site including an 8 minute recipe.

I really like cheesecake tarts, all you need is vanilla wafers, 2 pkgs of cream cheese, 2/3 c. sugar, 2 eggs, a tsp of vanilla, and your favorite pie filling, i recommend cherry. Get a muffin pan and line it with those liners and place a vanilla wafer in the bottom of each one. Mix the vanilla, eggs sugar and cream cheese together. Pour into the cups. Bake at 375 for about 15 mins. When you take them out you will notice the middle sinks, making a perfect spot to add the filling to. I've made these for several parties and they are gone within seconds.
