This a coconut cheesecake recipe. I love coconut so its one of my favorites. Ive made it twice at Easter time and everyone loved it. The key is to toast the coconut as per directions. It really is yummy. Enjoy!
1 1/2 cups graham cracker crumbs
3 cups sweetened shredded coconut, toasted
1 tablespoon fresh squeezed lemon juice
2 pounds cream cheese, room temperature
4 large eggs
3/4 cup sugar
1/3 cup unsalted butter melted
1 15ounce can cream of coconut (such as Coco Lopez)
1 cup whipping cream
1 teaspoon vanilla extract
Juice of 1 lemon
Preheat oven to 325 degrees F. Wrap outside of 9 inch diameter springform pan with
2 3/4inchhigh sides with foil. Mix graham cracker crumbs, 1 1/2 cups coconut, 1 tablespoon lemon juice and butter in small bowl. Press mixture onto bottom and up sides of pan.
Beat cream cheese and sugar in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Add cream of coconut, cream, 1 cup coconut, vanilla extract and lemon juice and beat until well blended. Pour filling into crust. Bake until puffed and set in center, about 1 hour 25 minutes. Transfer to rack and cool completely. Cover and refrigerate overnight.
Cut around pan sides to loosen cake. Remove pan sides. Sprinkle remaining coconut around edge of cake.

It's my hubby's fav and I have a super easy one, next to buying the box stuff!
1 block of cream cheese- soften in the microwave. (not fat free, it won't set up),
1 can of sweetened condensed milk- blend the two together.
add 1/4 cup of lemon juice and 1 tsp of vanilla- blend it all together- pour in a graham cracker pie crust- (if you have chocolate lovers the oreo graham cracker crust is great). Let set up in the fridge and ENJOY!
New York Style Cheesecake:
Make graham crust according to package directions and press into a 9" springform pan.
Mix together:
3 8-oz packages of regular cream cheese, softened to room temperature
1 cup of white sugar
4 eggs
1 large container of regular sour cream
1 small container (1/2 pint?) of 35% whipping cream
1 tsp vanilla
1 tsp grated lemon rind
Add each ingredient, one at a time and mix well after each addition.
Pour into the prepared crust and bake at 325F for 1 hour and 25 minutes then turn the oven off and leave for another hour (do not open the oven door during this time).
Cool and refrigerate. Eat it plain or top with your favourite fruit, etc.
The best recipe Ive ever used calls for 30 minutes of beating the cream cheese and egg and sugar mixture....no sourcream, nothing but eggs , cream cheese, sugar and lemon juice. I get more requests for that cheesecake then anything. .....go figure. If you google the recipe look for one that was in a Yankee magazine with a blueberry topping. Im not a big cheesecake fan, but I do enjoy a bite of this now and then. Also a stand mixer while not required makes this recipe more appealing. I do think think that the mixing time sets this one apart from others.

When I make cheesecake this is the recipe I use. It's a bit time consuming and pan cluttering but well worth it. It is a light fluffy variation and my favorite. Goes well with a light strawberry topping, nothing to heavy as you may squish the cake.
Katie's Cheesecake
or Woolworth's Cheesecake
1 (3 ounce) package lemon Jell-O (flavored gelatin)
1 cup boiling water
8 ounces cream cheese
1 cup granulated sugar
5 tablespoons lemon juice
1 can Carnation milk, well chilled almost icy but not quite
Graham crackers, crushed (Can use digestive biscuits)
Dissolve Jell-O in boiling water. Cool until slightly thickened.
Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well.
In a separate bowl, beat the Carnation milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer.
Line bottom of 9 x 13-pan with crushed Graham crackers.
Spread filling over and top with more crushed Graham crackers. Chill
