Breakfast Idea?!

Question: Has to feed 25 people and i need it to be a breakfast idea. Something that isn't too time consuming since i have to take it to a early breakfast meeting. Wanting something savory instead of sweet. Also, do you have any great sauage ball recipes to share? Thanks in advance :)

I'd make 2-3 of these in aluminum casserole pans. Notice the first one you make the night before, and just bake off in the morning.

Sausage Breakfast Casserole

1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread

Place cooked sausage on the bottom of a greased 9" x 13" baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350o for 50 minutes or until light golden brown and set in center. Serves 8.

Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers

Beth B is a really good breakfast cook. I've emailed your question to her. Maybe she'll send you one of her recipes.

Breakfast Quiche <Make three>

INGREDIENTS

* 1 tablespoon butter
* 1/2 onion, chopped
* 1 (12 ounce) package spicy ground pork sausage
* 4 eggs
* 1/2 cup Ranch-style salad dressing
* 1/2 cup milk
* 1 (8 ounce) package Cheddar cheese, shredded
* 1 dash hot pepper sauce (optional)
* salt and pepper to taste
* 1 pinch white sugar
* 1 (9 inch) unbaked deep dish pie crust

DIRECTIONS

1. Preheat oven to 425 degrees F (220 degrees C).
2. Heat butter in a large skillet over medium heat. Saute onion until soft. Add sausage, and cook until evenly brown. Drain, crumble, and set aside.
3. In a medium bowl, whisk together eggs, Ranch dressing and milk. Stir in shredded cheese. Season with hot sauce, salt, pepper and sugar.
4. Spread sausage mixture in the bottom of crust. Cover with egg mixture, and shake lightly to remove air, and to level contents.
5. Bake in preheated oven for 15 to 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 45 to 50 minutes, or until filling is puffed and golden brown. Remove from oven, prick top with a knife, and let cool 10 minutes before serving.

1lb. hot sausage
2 c. grated sharp Cheddar cheese
3 c. Bisquick (biscuit mix)

Allow cheese to come to room temperature. Combine all ingredients (easier done by hand). Shape into 1 inch balls and place on ungreased cookie sheet. Bake at 350 degrees for 12-15 minutes. Serve immediately or may be frozen for future use.
Makes 40-50 balls.
