Making fried rice, I have a problem though...?!


Question: I know all the steps of making fried rice but whenever its all finished the rice is all mushy and stuck together. How do I boil the rice so it doesnt go all mushy and what sort of rice do I use?

I have used instant and long grain white rice(depending on time) Cook the rice separately and don't stir the rice after you remove it from the heat. Alsl try adding a tsp of butter or margarine to the rice along with a dash of salt. When you fry the rice a wok is best becase the center cooks hotter than the outside and you can control the cooking more efficiently. However, let the rice cook for a moment on the bottom so you dont mix the oil into the unfried rice or it will become mushy. Good luck!

Use Basmatti rice. It cooks up drier. Also, it's best to cook the rice the day before you make the fried rice.

Use a good long grain rice like uncle bens and use 1/4 cup less water. It will be fluffy.

Its better to cook rice and save it for tommorow when you do cook fried rice so it won't be sticky nah mean? Use a wok. any rice will do, but i buy jasmin rice.

Get the rice from the Chinese food section of your grocery store. Only add as much water as the directions tell you to. You are over cooking your rice and that is why it is mushy. Rice should be firm but not crunchy. Just remember to keep a close eye on it as it is slowly boiling, and keep the lid on the pot as much as you can so that the rice will absorb the water quickly.

Envee's got it right...it's not the type of rice you use, it's the way you use it. Make it the day before and store it in the refrigerator.

Use Ready Rice from Uncle Ben's. It is half cooked rice that makes great fried rice and perfect risotto. You have lots of rice options to choose from.
For fried rice basmati is good. Use some better at the very beginning to get the rice cooked and moist (ignore the microwave cooking instructions). Then continue with your normal recipe.
