I need a recipe for yellow squash and zuchhini?!

Slice up the squash and cut the chicken into bite size pieces. Saute in olive oil with garlic, pepper, and a little salt. When done, sprinkle with Parmesan cheese.

Make a pouch out of aluminum foil. Slice the zucchini and squash in 1/2 thick slices and put in pouch. Dice about 1/2 onion and toss in with it. A little salt, pepper, garlic powder and soul seasoning with about 3 T butter (real butter works better). Toss on grill and steam for about 20 - 30 minutes.

Season up your chicken the way you like and grill at same time.

KABOBS! Chop your zuchini and squash into cubes as well as your chicken. Marinate the chicken in terriaki and even add some red/green peppers to the stick. Grill it!!!! great over a bed or fried rice!

You have the start of an easy dish. I saute the three in a little Naranja (Bitter Orange) Adds very little calories and gives great flavor. Do not overcook. Add other veggies if you like. I add onions and mushrooms. Do the chicken first. I cut mine up so it cooks quick. Never undercook chicken

What my grandmother used to do is slice up the zuchinni and squash put them in a pan with salsa and Monterry Jack cheese and bring that to a slow simmer till the cheese melts.

On the side she would bake the chicken breast.

then to serve she would put the chicken on a plate and smother the mixture on top.

I know it's not a "recipe" but it doesn't seem that hard to throw together.

Yellow squash? Do you mean summer squash? At any rate, my fav is to take the zuccini and cut in half...Remove the substance and mix with the chicken and some herbs (thyme, rosemary, etc. whatever you like)...Fill in the skins, top with Italian bread crumbs and parmesan cheese. Bake until the chicken is done. I also do this with Italian sausage.

Those are great recipies so far. I personally love squash & zucchini on the BBQ. I cut it into long strips put some olive oil on it and salt and pepper. Then I throw them on the grill until they are soft and a bit browned. Then I'd put the chicken on the grill with a few spices. Sometimes the simpler the dish the better. When the squash sits while the zucchini is cooking put some tinfoil over it and it is so delish.

A summer squash casserole recipe.
INGREDIENTS:
1/4 cup chopped onions
3 tablespoons butter
3 hard cooked eggs, chopped
3 summer squash, diced, about 3 cups
2 eggs, beaten
1/3 cup half-and-half
1/4 cup soft bread crumbs tossed with 1 tablespoons melted butter
PREPARATION:
In a saucepan, sauté onion in butter. In a large bowl, combine onions and butter with summer squash and chopped hard cooked eggs. Place squash mixture in a greased 1 1/2-quart casserole. Mix beaten eggs with half-and-half; pour over squash in casseroleSprinkle top with buttered bread crumbs. Bake at 350° for 30 minutes.
Recipe for summer squash casserole serves 6.

I like to saute the zuchinni and summer squash in butter with garlic and onion. The squash gets nice and soft and soaks up some of the garlic butter. I guess you could chop up the chicken in bite size pieces and cook them along with the squash.

cut them in long pieces, put them in pan with some soy sauce and some Mrs dash cook till almost tender, very good

I cut this recipe out of a Readers Digest years ago. It has been a favorite of mine and my family's. Great for summer when you have all those summer squash. It is easy to make and so good.

SKILLET CHICKEN ITALIANO
1 pound boneless chicken breasts, skinned and cut into strips
1 (21/2 ounce) jar sliced mushrooms, drained
1/2 cup Italian Dressing
1/4 cup chopped onion 2 tablespoons margarine
2 cups sliced squash ( yellow or zucchini, or both)
1 large firm tomato, cut into wedges
6 slices process cheese product cut into small pieces
In shallow baking dish, place chicken with mushrooms; cover with Italian dressing. Marinate 30 minutes. Drain chicken and mushrooms; reserve marinade.
In large skillet, cook onion in margarine until tender. Add chicken and mushrooms and cook covered, over medium heat, until chicken is tender, about 5 minutes.
Add squash, tomato and reserved marinade; cook and stir until squash is tender. Remove from heat; sprinkle with cheese..Cover; let stand 2 minutes or until cheese begins to melt. Makes 4 servings.
If you want to make this a low calorie meal use Lite Italian Dressing and lite Pasteurized Process Cheese such as Bordens brand. And lite margarine.

Yuk! Throw them out and buy a pizza.
