Slivers of celery would be cut lengthwise 2"-4" long and thin. But, like Natalie said for soups you would want to cut cross wise. Think about how you want to eat it and cut the celery that way. After all the nice part of cooking for yourself is that you can make the recipes personal.

Lengthwise, the whole length of the celery. I can't imagine all that stringy celery in a goulash though. I would slice it crosswise into 1/2 inch pieces instead.
