What else could I put in my sausage casserole?!
Answers: I am making sausage casserole tomorrow night for the first time, I know what I'm doing. So far the ingredients I have to put in it are Peppers, Onion, Potato, Carrott, and a few cloves of garlic, I am planning to use vegetable stock cubes with it. Now my husband doesn't like peppers so what could I use either as a substitute or as well as? I suppose I could put mushrooms in it! Let me know what you think, and if you have any other suggestions on ingredients I would be glad to hear them. Thanks

I'd put the peppers in, but leave them in large strips so he can easily pick them out. You still want that flavor from them, IMO.
Mushrooms would be good, too.

I would put mushrooms in or even black pudding.

i usually add in a tin of chopped tomatoes but not all the juice,it goes really well.
I DON'T want to think about it. I want to EAT it. Dinner sounds great!!! The flavour of the peppers tends to permeate the other vegetables so if your husband is not fond of peppers the mushrooms would work well. Maybe get adventurous by using a more exotic mushroom like cremini rather than button mushrooms.

Chopped spinach is great in almost any casserole. Same with water chestnuts and garbanzos (chick peas). For the peppers you might substitute radishes, or horseradish.

Dont put potatoe in it it will go so bland and tastless maybe butternut squash or sweet potatoe FULL of flavour.
Hearty Sausage Casserole
Ingredients:
1 lb Bulk pork sausage or ground
-beef
1 sm Green bell pepper; chopped
-(1/2 cup)
1 sm Onion; chopped (1/4 cup)
2 ts Chili powder
2 cn Tomato sauce; (18 oz)
1 cn Pinto beans; undrained
-(15-18
; oz)
1 cn Whole kernel corn; drained
-(18 oz)
2 c Shredded sharp Cheddar
-cheese; (8 oz)
Corn Bread Topping
Sour cream; chopped lettuce
-and sliced ripe olives,
Instructions:
Heat oven to 400. Cook sausage, bell pepper and onion in 10-inch skillet
over medium heat, stirring occasionally, until pork is no longer pink;
drain. Stir in chili powder and tomato sauce. Pour into ungreased
rectangular baking dish, 13x9x2 inches. Spread with beans and corn;
sprinkle with cheese. Prepare cornbread topping and pour evenly over
cheese. Bake 25 to 35 minutes or until bubbly and topping is golden. Serve
with sour cream, lettuce and olives.
