How do you make killer tacos?!
INGREDIENTS
1 1/2 pounds ground beef
1 1/2 cups chopped onion
1 cup diced celery
1 cup diced green pepper
2 garlic cloves, minced
1 pound process cheese (eg. Velveeta), cubed
1 (10 ounce) can diced tomatoes and green chilies, undrained
2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 cups crushed corn chips
Shredded lettuce
chopped green onions
DIRECTIONS
In a large skillet, cook the beef, onion, celery, green pepper and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in the cheese, tomatoes, chili powder and cumin. Cook and stir over low heat until cheese is melted. Stir in corn chips.
Assemble tacos in your shell (better if home made)

First and foremost, I don't use packaged taco shells. I take corn tortillas and fry them in a little oil, then drain on a paper towel. Or, I'll make a soft taco with a flour tortilla. I use the usual taco meat filling, sliced avocados, tomatoes, jack and cheddar cheeses, sour cream and salsa.
Making tacos with meat from the Westland/Hallmark Meat Company would be a great start. It is alleged that this company has harvested meat from cows with Bovine Spongiform Encephalopathy. Cooking the meat at temperatures below 140 degrees F will ensure that your tacos will be killers.
I like a crisp shell so I butter one side of a tortilla and put that on a griddle and build my taco with fixings off to one side. Then I fold the empty side over the filling, like a folder. I also use chi chis seasoning for my taco meat. It tastes way more authentic and doesn't have that artificial orange color to it.

I agree, start off by making your own tortillas and drain them on paper towels.
For the meat: just a lean ground beef, and when it's halfway browned, drain it, and add garlic pepper and freshly chopped garlic. Maybe some cayenne if you're feelin spicy.
I like black beans with mine, and i just heat those up.
Then for toppings i just have out some cheese, tomato, lettuce, avocado/fresh guacamole, taco sauce, and sour cream.
To make em *killer*, finish off by adding a butcher's knife, and voila! k-i-l-l-e-r-t-a-c-o-s. :)
LAME i know. don't give me thumbs down. i'm -simple- by nature.
I usually just make the meat with store bought seasoning and shells but the real kicker is instead of shredded cheddar, I put rotel dip (melted velveeta and a can of rotel) on them.
by adding 'fire' sauce to taco bell tacos... lol
I buy dark corn tortillas and fry them in LARD from the mexican aisle (this makes a huge difference in the taste)
fry the meat, add the spice, a must in my tacos is sour cream and black olives, along with all the other goodies!!!
