Homemade pizza, How to make a great pizza?!
Use a pizza stone, not a metal cookie sheet.
Use excellent ingredients and homemade crust.**
**PIZZA DOUGH
1 (1/4-oz) package instant dry yeast (2 1/4 teaspoons)
2 1/4 to 2 3/4 cups unbleached all-purpose flour plus additional for kneading and dredging
1 cup warm water (105 - 115°F)
1 teaspoon salt
2 Tbsp olive oil
Whisk together yeast, 1 tablespoon flour, and 1/4 cup warm water in a measuring cup and let stand until mixture develops a creamy foam, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
Stir together salt and 1 1/2 cups flour in a large bowl. Add yeast mixture and remaining 3/4 cup warm water and stir until smooth, then stir in another 1/2 cup flour. If dough sticks to your fingers, stir in just enough flour (up to 3/4 cup), a little at a time, to make dough just come away from side of bowl. (This dough may be wetter than other pizza doughs you have made.)
Knead dough on a lightly floured surface with floured hands, lightly reflouring work surface and your hands when dough becomes too sticky, until dough is smooth, soft, and elastic, about 10 minutes. Divide dough in half and form into 2 balls, then generously dust balls all over with flour, cover with bowls or dish towel and let rest 10 minutes. Shape into pizzas, prebake 5-7 minutes at 400oF.
Dough can be allowed to rise slowly, covered, in the refrigerator for 1 day. Bring to room temperature before using.
Makes 2 (10-inch) pizzas.
Answers: Set your oven about 550oF, if it will go that high. High and quick heat is best.

I like to use flour tortillas for very thin crust pizzas, French bread cut lengthwise down the middle for thick crust.
If I don't have time to make my own sauce.... I use a jar of Ragu spaghetti sauce.
I put all my favorite toppings on.. and bake at 375 degrees about 8 minutes for thin pizzas and 10 - 12 minutes for the thick ones.
Even if you've never made pizza from scratch, I hope you'll try this recipe. it's the highlight of my favorite casual meal. You have to plan ahead to allow rising time for the dough, but it is easy to work with and the crust is so good.
INGREDIENTS
1 (.25 ounce) package active dry yeast
2 cups warm water (110 degrees to 115 degrees)
3 tablespoons vegetable oil
1 1/2 teaspoons salt
4 cups all-purpose flour
SAUCE:
2 (8 ounce) cans tomato sauce
1 1/2 teaspoons grated onion
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
TOPPINGS:
4 cups shredded mozzarella cheese
4 ounces Canadian bacon, diced (optional)
1 (3.25 ounce) package sliced pepperoni
1 medium red bell pepper, sliced
1 medium green pepper, sliced
1 (2.25 ounce) can sliced ripe olives, drained
1 cup chopped onion
1 cup grated Parmesan cheese
1/2 cup minced fresh basil
DIRECTIONS
In a large mixing bowl, dissolve yeast in warm water. Add oil, salt and 2 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest in a warm place for 10 minutes.
Combine sauce ingredients; set aside. Divide dough in half. On a floured surface, roll each portion into a 13-in. circle. Transfer to two greased 12-in. pizza pans; build up edges slightly. Bake at 375 degrees F for 15 minutes or until lightly browned. Spread with sauce; sprinkle with toppings. Bake for 15-20 minutes or until cheese is melted
The best way- This is more of a buy-and-assemble pizza, but it is much better than any pizza I have ever had at a restaurant/pizza parlor. It is SO easy and DELICIOUS!
-A lot of bakeries that sell pizza also sell dough by the bag. We can also get it locally at our grocery store in the refrigerator section. (Why make a dough when you can buy fresh dough? It is inexpensive and saves a ton of time.)
-Buy a bag of dough, let it sit out until it is room temp, and sprinkle cornmeal on your pan (This really makes a difference!)
-Stretch the dough when it is room temp, it will be a lot easier.
I have a pizza stone on order, but to be honest we just use a traditional cookie sheet and it comes out PERFECT.
-Spread on any kind of store-bought spaghetti sauce.
-Sprinkle on shredded mozzarella and top with anything- we use pepperoni, peppers, onions, etc.
-Bake at 350 degrees until the dough is cooked through- just keep an eye on the bottom to make sure it doesn't burn! (We don't seem to have this problem.)
I wish that I had the time or energy to make pizza dough from scratch, but this pizza is WAY better than any takeout!
It might sound a little weird at first...i know a lot of people aren't partial to pita bread...but this is my recipe:
-1 pkg trader joes whole wheat pita bread
-1 jar of marinara sauce
-grated cheddar cheese
-grated mozzarella cheese
-italian dressing
-toppings....mushrooms, tomato slices, etc...
1) Heat oven to 350 degrees
2) Turn a baking sheet upside down & cover with foil and place 2 whole pitas on the sheet
3) Brush the pitas with the italian dressing and place in the oven for just 2 minutes
4) Take them out, cover with the sauce, cheese, and toppings, and bake until the cheese is melted (5-10 mins)
5) Enjoy!
These are nice because they're quick and easy, and they're like mini pizzas so everyone can choose their own toppings. [Helps with picky eaters like myself...;) ]
The best and easiest way to make pizza, is to get store bought ragu sauce, and shredded cheese. Go on foodnetwork.com and find a good pizza dough recipe. I myself think the best secret to good pizza is cooking it on a pizza stone in the oven. It makes the crust perfect.
I like homemade taco pizza. I use Pillsbury pizza dough as the crust.
1 can pizza dough
1 bag taco cheese shredded
1 can refried bean
1/2 lb seasoned taco meat
Lettuce, shredded
tomatoes
olive
Nacho cheese Doritoes
1. Prepare pizza dough in oven as directed on the package.
2. Layer beans, meat, and cheese on pizza crust and bake in
the oven for 10-12 minutes
3. When cheese is melted remove from oven and layer the
lettuce, tomatoes, and olives
4. Sprinkle crushed Doritos on top and serve.
My 3 year old and I made mini pizzas tonight. We bought english muffins, cut them in half, spread pizza sauce on them, covered them with mozzerella, and then put pepperoni on them. They taste good and they are fun to make.
