Taco Soup
1-1? lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning
Garnishes (any or all)
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese
Brown ground beef over medium heat in large stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still opaque, stop cooking and drain off any fat. Return to heat and add remaining indredients. Cover and let simmer at least 30 minutes, or up to about 3 hours. (Can be held longer in a slow cooker set on Low.)
Serve in bowls w/ crushed corn chips in the bottom. Top each bowl w/ garnish of choice.

Well, I am from Tx and the first thing that comes to mind, grilled burgers, you can't go wrong. Try Shephards pie. or meat loaf.
Shepherds pie: all you need are taters, veggies and HB meat. cook and mash your taters. cook veggies if you want. and crumble and fry meat. get baking dish layer: taters, veggies, meat, taters, veggies, meat, taters...and so on. put in 350 oven and bake for like 10 minutes. you can put cheese on top to melt, when cheese is melted, it is done. it is good, cheap, and fast. you can put milk, butter and sour cream in your taters and it will taste awesome and creamy.

Hi!! O.K. so I am sure that you want this recipe to be fairly easy that way you can spend more time with them when they come over so I would suggest something quick. I really like manwiches (AKA Sloppy Joes) you make them with ground beef ,1 medium chopped onion and a combo of spices that you and your family enjoy(garlic, salt, pepper, paprika, chili pepper flakes, maybe some thyme...) then add a can of already prepared manwich sauce from the store. ( I usually like to make my own but it takes a while, so this should be just fine!! Also be sure toast the buns).
Another thing you can do is make cheeseburger pie. This is a recipe, usually I try to recommend things that I have created myself, but this is just sooo good, and easy!! Not to mention you can add things or take things away and it just as good, my only suggestions for this dish would be is to add some onion, spices, and use a good amount of sharp cheddar cheese. This recipe can be found on the Bisquick box, sometimes it's on the back, sometimes it's inside, but look around the box and you will find it, if not you can always look on the website. These meals are not only simple but are fun and easy to eat, that way everyone feels comfortable and you all have plenty of time to spend together. (I would approximate the sloppy joes take about 15 minutes to prepare, and the cheeseburger pie about 30-45, majority of that time is spent baking) Hope this helps, have fun, Good Luck and Happy Feasting!!!
