Coat the bottom of the pan with EVOO and add two Tablespoons of butter. Low to medium heat so that nothing burns.

The purpose of the butter is to add flavor but if you use only butter, it will burn as it has a low smoke point. If you cut the butter with equal amounts of olive oil, you raise the smoke point but still get the flavor. How much you use depends on the pan size. In a 12 inch skillet, I would use between 1 1/2 and 2 tbs of each.

Another option is to clarify your butter. Heat over medium low heat until the fat separates from the milk solids and skim the solids. The clarified butter has a much higher smoke point and can be used without oil.
