Soul Food dinner?!


Question: Ok, I want to make a soul food dinner for the family today. Im 12 years old going on 13 and it's like a homework assignment for my home economics class. I don't need anything too complicated or too messy. I need a Main Dish recipe, a Desert, and a Drink and they all have to be homemade. thank you so much if you guys can help. 10 points for what ever recipe I choose. Thanks again =)

CHOCOLATE PEANUT BUTTER BARS - SOUL-FOOD-DESSERTS
2 cups semisweet chocolate chips
3/4 cup crunchy peanut butter
3 cups toasted oat cereal


Grease an 8-inch square baking pan. In the top of a double boiler, melt the chocolate chips with peanut butter, stirring until smooth. Remove from the heat and gradually blend in the cereal. Spread the mixture evenly in the prepared baking pan. Refrigerate until thoroughly chilled, then cut into large or small bars. Yield: 24 bars depending on size.

Not sure about a drink - what about iced sweet tea?

make some nice homemade macaroni and cheese, you can find very easy recipes for that on cooks.com or foodnetwork.com or recipes.com. And make a simple dessert like a no bake cheesecake or something

main dish: fried chicken
This fried chicken recipe makes enough for about 8 people

INGREDIENTS:
2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings

PREPARATION:
Wash chicken and pat dry.
In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well. Pour the milk into a wide shallow bowl.
Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F.

COOKING PART:
Add the bacon grease. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly. Arrange the chicken pieces in the fat, making sure not to overcrowd. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer. Turn once. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch. Transfer the chicken to a large platter for serving.
Serves 8.

desert: homemade peach cobbler

Recipe Ingredients:

3 tbsp butter
1/2 cup self rising flour
1/2 cup pure fine granulated sugar
1/2 cup whole milk
1/2 teaspoon vanilla extract
1 cup canned sliced peaches

Cookware and Utensils:

1 - Measuring cup
1 - 8.5x4.5x2.5in Baking pan
1 – Mixing bowl
1 – Stirring spoon

Recipe Instructions:

As always the key to great cooking is preparation and quality ingredients.

Preheat oven to 350. While you're preheating your oven go ahead and melt 3 tablespoons of butter into a baking pan.

Combine flour and sugar into a mixing bowl and stir briefly. Next add whole milk and vanilla extract and mix thoroughly. By now your oven should be preheated and your butter melted.

After the butter has melted, pour your mixture to the baking pan. Next evenly distribute your sliced peaches over the mixture. Do not stir. Bake at 350 degrees, in the center of your oven for 1 hour until peach cobbler is golden brown. This recipe will feed 4 to 5 people.

Preparation Time = 8 minutes Cooking Time = 1 hour until golden brown

drink: sweet tea :)

Place the two cups water in a pot and add the tea bags. Bring to a boil, do not continue boiling. Remove from heat and let steep. Pour warm tea into empty pitcher. Add the sugar and stir until the sugar is dissolved. Fill remaining pitcher with cold water.

Mac and cheese was a good idea! Or you could get some steaks and just grill them, but you might be a little young to be using the bbq so maybe your parents could help you with that. And with that you could have twice baked potatoes. They are AMAZING. First you bake potatoes for like 45 minutes, then take them out of the oven and let them cool. Cut them in half and then scoop out the potato insides leaving a light layer of potato with the skin. Put what you scooped out into a big bowl and add sour cream, cheese, and bacon then mix it together with an electric hand mixer and then re-fill the potato skins, top with cheese, and cook them again. THEY ARE AMAZING. oh wow. And drink...you would make lemonade?

Meatloaf with creamed potatoes and corn or green beans are always a favorite at my house.
Meatloaf
1 # hamburger meat
1 package meatloaf seasoning (McCormick is good)
1 egg
1/2 c. breadcrumbs
1/2 c. tomato sauce
Mix all ingredients together, form into a loaf and bake 1 hour at 350'F or according to package directions.
Easy Peach cobbler
1 stick butter or oleo
1 c. all-purpose flour
2 teaspoons baking powder
1 c sugar
3/4 c. milk
1 large can sliced peaches
4 tablespoons sugar
1/2 c. juice from peaches
Melt butter in 9"x13" backing dish. Mix flour, baking powder,sugar and milk together then pour into butter. Spoon peaches into batter evenly and sprinkle with sugar and pour peach juice over all. Bake at 350'F for 1 hour or until golden brown.
Creamed Potatoes
Peel, dice and boil 7 or 8 medium potatoes in salted water until fork tender.
Drain and add 1 stick of oleo and let melt over hot potatoes then mash and whip with electric mixer until smooth then add canned cream or whole milk until creamy. Beat with mixer until smooth and creamy.
Ice tea is always good with any meal.
Steep 2 family size tea bags in about 2 c. water.
Remove bags from water and add 1 c. sugar. Stir to dissolve.
Pour sweetened tea into pitcher and add 2 cups cold water and stir. Lemon wedges are a nice flavor with the tea.
You can add more cold water depending on the strength of tea you want.
