Sausage and Pepper Quiche
1 1/2 cups shredded cheddar cheese
2 tablespoons flour
1 cup milk
3 eggs , slightly beaten
1/2 cup grated parmesan cheese (optional)
1/2 pound bulk pork sausage, cooked and drained and finely chopped
1/4-1/2 cup bell peppers, finely chopped
1/4 cup onion, finely chopped
9 inch unbaked pie shells
1 dash pepper
Directions
Toss cheddar cheese with flour. Add milk, eggs, and parmesan cheese (if using), sausage, peppers, and pepper; mix well. Pour into unbaked pie shell. Bake at 350* for 50-60 minutes or until set.

Simplest? Combine them all in a scrambled egg casserole. Make sure the sausage is cooked well, and cut into pieces. How about onion also.
EASY BREAKFAST HASH BROWN CHEESE BAKE
1 pkg. (32 oz.) frozen shredded hash browns
2 cans of potato soup
2 (8 oz.) sour cream
2 c. grated sharp cheddar cheese
1 c. Parmesan cheese
Combine all ingredients, stir well. Spoon into greased 9X13 baking dish.
Bake at 350 for 40 minutes or until a little brown.

2) Scrambled eggs mixing in the peppers top with cheese and sausage on the side
3) Frittata in a cast iron skillet cook sausage until done then add the peppers and cook until almost done. Add some frozen hash browns or thin sliced potatoes. Mix the eggs with a little milk then pour into the cast iron skillet over the sausage and peppers. Bake in the cast iron skillet at 400 degrees for about 30 to 45 minutes or until done. Add cheese on top then cut into pie shaped servings.
Just put that in eggs and make an omelet!
chop up all of the peppers....
Chop up an onion and the peppers and saute' them in 3 TBS. of butter.
Cube up 4 potatoes, fry them up, add 1/2 of the sauteed veggies., 1 tsp. garlic powder, salt and pepper to taste.... We call this Irish potatoes.
Beat some eggs, add a couple TBS of water...pour into buttered skillet..... put the remaining sauteed veggies and some ham and cheese cut up. Using a fork, separate a bit of the egg from side of pan, pour in 2 TBS of water so it goes under the egg.... put on a lid..steam.....remove lid...flip half of the egg onto the other half of the egg forming an omelet.
you can make a casserole and serve with english muffins.

How about a nice fluffy cheese and pepper omelet, with the sausage links on the side with some toast and coffee. One of my Moms secrets for fluffy omelets is adding water (about 2 table spoons to 3 eggs) while mixing, along with some salt and pepper to the mixture......Start the coffee.....butter or spray your pan and lightly brown up your peppers....(onions too if you want) in a separate pan start the sausage....while the pan is warm to hot, after the veggies are browned add the well mixed eggs..... keep turning your sausage......patience comes in here....when you first put the eggs in the pan with your spatula stir a bit, to get the eggs that have started to cook up off the bottom of the pan, and off the edges.....turn down the flame and wait about 5 to 7 minutes and turn over....if you do not have a spatula or don't think you can do this all in one swoop then gently cut the omelet in half and turn over one half at a time and again patience, pop your toast down.....add the cheese to the now hot side you just turned over and when the other side is done fold this omelet together....sausage, coffee and toast are waiting on you.....
How about a breakfast burrito? You could take all the ingredients you have and wrap them in a tortilla. Then you add any toppings to the burrito that you want, salsa, sour cream, lettuce, tomatos. Happy Birthday to your Hubby.

READY IN 14 Hrs 50 Min
INGREDIENTS
1 pound ground pork sausage
1 pound bacon
4 cups milk
8 eggs
12 slices white bread, crusts trimmed
2 tablespoons butter, softened
3 small onion, chopped
6 slices processed American cheese, shredded
DIRECTIONS
Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
The next morning: preheat oven to 425 degrees F (220 degrees C).
Bake, covered, in preheated oven for 45 to 60 minutes.
