Recipes for 8 kids?!


Question: We live by the beach and so everyone arrives for spring break .My nephews and nieces are coming for 12 days.Need any simple ideas for to feed 8 kids.
Some of it needs to be things that are easy to carry to beach for lunches.
sausage balls,pepperoni rolls.(i know i have a long way to go..lol)

If you feed them a hearty breakfast, lunch won't be such a "feeding frenzy". Try these (the great thing is you make these the night before, so no rushing around in the morning)

Stuffed French Toast Recipe

24 raisin bread slices, crusts trimmed
8 eggs
3 cups low fat or whole milk
1 cup half-and-half
1 cup granulated sugar
1 tablespoon vanilla extract
1/8 teaspoon ground nutmeg
Two 8-ounce packages Neufchatel or regular cream cheese, softened
Cinnamon sugar, optional

Grease a 13 x 9-inch glass baking pan. Arrange 12 of the bread slices in the bottom of the pan, overlapping slightly. Whisk 6 eggs in a large bowl until well beaten. Add the milk, half-and-half, and ? cup of the granulated sugar; mix well. Pour half of the milk mixture evenly over the bread slices.
Combine the remaining 2 eggs, ? cup granulated sugar, vanilla, nutmeg, and cream cheese in a blender. Cover and blend until smooth. Pour the cheese mixture over the bread in the pan. Arrange the remaining 12 bread slices on top of the cheese mixture, overlapping slightly, and pour the remaining milk mixture evenly over all. Cover with plastic wrap and refrigerate overnight. Preheat the oven to 350 degrees F. Remove the plastic wrap from the baking pan. Bake 55 minutes, or until a knife inserted in the center comes out clean. Remove from the oven and let stand 10 minutes. Sprinkle with cinnamon sugar, if desired. Serves 8 to 12

Farmer's Casserole (for 12)

6 cups frozen shredded hash brown potatoes
1-1/2 cups shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar cheese (6 ounces)
2 cups diced cooked ham or Canadian-style bacon
1/2 cup sliced green onions
8 beaten eggs or 2 cups fresh or frozen egg product, thawed
2 12-ounce cans (1-1/2 cups each) evaporated milk or evaporated skim milk
1/4 teaspoon salt
1/4 teaspoon pepper

Grease a 3-quart rectangular baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onion. In a large mixing bowl combine eggs or egg product, milk, salt, and pepper. Pour egg mixture over potato mixture in dish. Bake, uncovered, in a 350 degree F. oven for 45 to 55 minutes or until center appears set. Let stand 5 minutes before serving. Makes 12 servings.

Make-Ahead Tip: The night before, prepare casserole. Cover and chill. To serve, bake as directed except increase baking time to 55 to 60 minutes.

These are wonderful muffins that can be made ahead of time (the batter stays good in the frig for 6 weeks). Just bake them as you need them!

6 Week Bran Muffins

1 (15oz.) box Raisin Bran
1 C. melted butter or oil
1 1/2 C. sugar (more or less depending on your sweet tooth)
4 eggs, beaten
1 qt. buttermilk
5 C. flour
5 t. soda
2 t. salt
Extra raisins

Mix Raisin Bran, sugar, flour, soda, salt and extra raisins in a large bowl. Add eggs, butter or oil and butter milk and mix well by hand. Fill greased muffin pans 2/3 full. Bake at 375-400° F. for 15-20 minutes or until brown. Batter will keep for six weeks.

Sandwiches are always good beach food. Lots of snacks (chips, pretzels, etc.) Pizza at night after a long day in the water. Cold cereals for breakfast.

2. Thermos of chicken noodle soup, garlic bread, and jell-o cups.

3. Peanut butter, jelly, bread..... carrot sticks and celery sticks, rice krispie treats.

At home....make flour tortilla pizzas! They are very thin crust pizzas, everyone gets to make their own...(that guarantees they will eat it too).
Jars of spaghetti sauce, Flour Tortillas, meats and veggies and cheeses.

Bake in 375 degree oven on baking sheets (can make 3 at a time on each baking sheet) for about 8 minutes.

for breakfast...cold cereal...except on weekends,pancakes and scrambled eggs goes a long way..look for the sales on lunch meat..go for the buy one get one free..buy lots of juice and milk maybe your talking about 2 gallons a day.you got your work cut out for you,but its only during spring break..have fun

Let them make their own mini pizza with English muffins. Kids LOVE these. They're not exactly beach food, though.
