What's a good substitute for rainbow or red chard?!

Any kale will work, as well as cabbage. Though kale would work the best.

Beet greens would be my first choice as they are pretty much the same as chard, aka silver BEET, and red stemmed. Fordhook (white chard) would also work unless color is more important than taste. Spinach would be another choice. they taste similar but you won't get the eye candy with spinach.
