I do love a good pork roast!
2-2 1/2 lbs. boneless pork loin
2 garlic cloves, slivered
2-3 tsp. mixed, crumbled oregano, thyme, rosemary and sage
3-4 tsp. mustard (1/2 Dijon, 1/2 regular)
3 tbsp. olive oil
Sprinkle the slivers of garlic with the herbs, pressing to make them adhere. Make a few cuts in the surface of the meat and insert the herbs-coated garlic. Mix together the oil, mustard, and remaining herbs. Brush the meat with mustard mixture, coating thoroughly. Let rest one hour.
Roast in 350 degree oven for about 1 1/2 hours. Turn off the oven and let the meat rest for about 15 minutes before removing it. Serve hot or cold. Thinly slice and place on your favorite bread for a yummy sandwich.
I can only eat it when it is cooked certain ways.

Hope you enjoy!
pulled pork or baby backs are my favourites. For pulled pork, I put a Boston butt on a medium hot grill with a smoker box for 25 - 30 minutes, to kinda get it going and to add the smoke flavour. Take it off, put it in a Dutch oven or other covered pot/pan and bake it covered for 8 hours @ 225F. Allow to cool slightly, then pull it, shred it, chop it, season to taste with s & p and add sauce to your liking. Around here, the sauce is simple--vinegar, crushed red pepper and a tad of brown sugar.
I love pork! Of course most of it's not good for you, it's fatty. Bacon, sausage, ham, pork chops...what's not to love?!
I like to put country-style ribs in the crock pot with a can of beef stock. Cook on high for the first hour then low for 6. When done, shred with forks then put in aluminum pan with bbq sauce. Cover. Put in preheated 350 degree oven for 30 minutes. Great pulled pork sandwiches!!!
I love pork too! One of my favorite ways to fix Pork chops is
I brown them on both sides, then I add a can of cream of
mushroom soup, cover & let simmer 25-30 min. They are
so tender this way, and it's quick& easy.
PIG RULES!! I love pork chops, pork steaks, pork roast, pork tenderloin, pork ribs, pork cubed steak--& of course, ham & bacon. You can do so many different things, & it can go with ANYTHING. Here are 2 of my easy favorites--hope you enjoy them!
Pork Chop Loaf
Brown 4 chops. While they cook, fix a box of Stove Top Stuffing Mix for Pork. Spray a 9 x 5 loaf pan with Pam. Stand chops in pan with bone side down. Pack stuffing in between chops. Bake 1 hr at 325. Add mashed or scalloped potatoes, salad & a veggie.
Crockpot Rib Dinner
Put boneless country ribs in crock pot. Add 4-6 potatoes, peeled & quartered. Drain a can of corn & pour over. Slice a medium onion & lay slices on. Dump a bottle of your favorite BBQ sauce over. Cover & cook Low for 7-8 hrs. Add salad & crusty rolls or breadstick.
Enjoy!!!
