I have an idea for Breakfast and I need tips?!


Question: I've never made a quiche before, or even made anything before bed to bake in the morning. But I have an idea and I need to know if I will do it wrong before I do it. :). I will only be making a small one. I'll use a glass baking dish and spray with cooking spray then line inside with wheat bread, brush with melted butter, then place thawed hasbrowns on top and brush with the melted butter. Then I will cook up some bacon and breakfast sausages, crumble the sausages and lay the bacon on top of the hasbrowns in the dish then scatter the sausage bits around. then I will take a couple eggs, mix with milk and pour ontop of mixture. Then I will put it in the fridge until morning, then I will bake at 400 degrees until done. Does it sound like I would make it right? and would my hasbrowns be crispy? Also..how would I know if it's done? THANKS!

What you are making is actually an old Amish favorite that I have made many times. It's called a:
"Breakfast Casserole"

The recipe I have goes like this:

6 eggs
2 Cups milk
6 slices of bread
1 teaspoon salt
4 oz. mild cheese cubed
1 pound sausage, sauted
Mix eggs and milk, pour over other ingredients in a buttered or greased cake pan. Refrigerate over night and bake at 350 degrees for 45 minutes.
(You can vary the meat ingredients, of course.)
The bread, eggs and milk will combine to make a scrabbled egg/custard like background for your meat & potatoes.

Unless your hash browns are placed on top of all other ingredients they will not be crisp.
BTW, in a pinch you can also substitude frozen french fries for the hash browns.
I would not bake at 400 degrees. the top will burn before the egg mixture sets.

1) I've never heard of using bread
2) No your hashbrown's will not be crunchy
3) It will be done when you touch it and it springs back kinda like a cake.
4) I would put the sausage and bacon on the bottom then the hashbrowns then the egg mixture. Sounds like this is more of a Fritatta than Quiche.
5) I'm not sure I would do this the night before I would do it in the morning
6) You could also use a cast iron skillet (that way it's all cook and baked in one pan) instead of a glass dish

It all sounds good to me. I doubt that your hashbrowns will be crispy. To tell if it is done insert fork or knife into center if it comes out clean then it is done. Good luck.

My personal recommendation is to skip the bread, I think it would turn out super soggy that way, and substitute a ready to bake pie crust. Don't worry about brushing it with butter. You will need to really cook anything like hashbrowns before you put them in the quiche. I would cook them as crispy as you would like on the side, pour the scrambled eggs into the ready to bake crust, gently stir in the cooked meats, then stir in the potatoes. You could also stir in a little cheese. You will need about 6 eggs for a deep dish pie crust. I would then bake it at about 350 for about 45 minutes to an hour. Low and slow will help it turn out better. I hope this is helpful:-)

PS> you could easily make this the night before and then gently reheat pieces in the microwave on 50% power in the morning.. Quiches have a better texture and taste if they can rest awhile

The reason I said not to use the bread is because you were asking about a QUICHE, not a CASSEROLE, which are very different items.

Sounds good...But you might want to brown the hash browns first. Toast your bread then butter. Do every thing else like you said. In the morning just pop into the oven and heat it up.
After 20 minutes pull it out and sprinkle with cheese and put it back in and cook for another 10 minutes.

I make something like this for Christmas morning....sans the hash browns...
I lay the bread on the bottom...top with cooked sausage and cheese..run 6 eggs w/3/4 cup milk in the blender....and pour it over the top....leaving it over night works because it gives the eggs time to absorb into the bread...I always make it the night before and pop it in the oven Christmas morning at 350 for one hour...

I disagree with those saying not to use the bread. This is a common breakfast casserole technique. I'd put the hash browns on top and add the cheese after the casserole has baked a bit. Lower the temperature to 350-375. Good Luck. I'm sure your recipe will be a hit.
