Anyone got a great recipe for fried rice?!
INGREDIENTS
2 cups leftover rice
leftover meat (as desired)
1 cup chopped onions
1 cup frozen peas and carrots
3 eggs, beaten
1 tablespoons vegetable oil
1 teaspoons soy sauce, or to taste
1 teaspoon oyster sauce (secret ingredient used by restaurants)
DIRECTIONS
The best fried rice is made with leftover, cold rice.
Break up rice in a bowl.
In a small skillet over medium heat, scramble the eggs; add to rice mixture. Break up egg into shreds. Add to rice in bowl.
Add meat to bowl.
Heat oil in a large skillet or wok over medium heat. Fry the onion, carrots and peas until until is well done.
Add rice,egg and meat. Stir fry until heated. Add soy sauce and oyster sauce and stir through rice mixture. If mixture is dry add a few drops of water as needed.
Serve immediately.

I always start my Fried rice off with a good oil that can take the heat like peanut or corn with a bit of butter, and saute my garlic and oinion then add my meat. when the meat is done I add rice a bit at a time i may add some more oil at this point too. season with soy sauce and someimes fish sauce and pepper. I some times add veggies at this point. then I make a whole in the middel of the pan, put some more oil and add my scambled egg. i let the egg cook untill done and chop it up and mix with the rest of the rice. at the very end I re-season and maybe add some fresh herbs like corriander right be for i plate. I love to serve it with fresh lime wedges.
FRIED RICE
4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 tablespoons dried mushrooms
2 dried whole eggs, rehydrated
1 tablespoon soy sauce
shredded canned ham, pork or chopped shrimp (optional)
Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions and mushrooms and meat, if using. Cook for several minutes. Combine rehydrated eggs with soy sauce and stir into pan. Cook until eggs set.
Cut up some bacon in little tiny pieces, fry it. Cook some brown rice like the package says. When the rice is done, fry it in the bacon grease, along with the bacon. You can add grated carrots, green onion or whatever. When the rice looks dry, then crack 2 eggs in it and stir very good. The egg will cook and become crumbled little pieces. Add soy sauce and seasonings while you are frying, I forgot to mention that.

Authentic Fried Rice
Ingredients:
2 oz Chinese barbecued pork
1/4 lb Fresh or frozen peas
2 tb Oil; preferably peanut
2 c Long-grain rice; steamed and
-chilled
1 ts Salt
2 Eggs; beaten
4 oz Fresh bean sprouts

CUT THE PORK INTO FINE DICE. Blanch the peas in a saucepan of boiling water
for about 5 minutes if they are fresh or 2 minutes if they are frozen.
Drain them in a colander. Heat a wok or large skillet until it is hot. Then
add the oil and wait until it is almost smoking. Add the cooked rice and
stir-fry it for 1 minute, and then add the barbecued pork, peas and salt.
Continue to stir-fry the mixture for 5 minutes over high heat. Next add the
beaten eggs and bean sprouts and continue to stir-fry for 2 minutes or
until the eggs have set. Turn the mixture onto a plate and garnish it with
the scallions. Serve at once, or let it cool and serve as a cold rice
salad.
Chinese Fried Rice
Ingredients:
3/4 cup finely chopped onions
2 1/2 tablespoons oil
1 egg , lightly beaten
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or chicken , chopped
1/2 cup finely chopped carrots (very small)
1/2 cup frozen peas , thawed
4 cups cold cooked rice , grains separated (preferably medium grain)
4 green onions , chopped
2 cups bean sprouts
2 tablespoons light soy sauce
Directions:
1. Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
2. Allow wok to cool slightly.
3. Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
4. Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
5. Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
6. Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
7. Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
8. Set out additional soy sauce on the table, if desired.
