BLACK AND WHITE BEAN SALAD

2 c. cooked black beans
2 c. cooked white beans (navy or soldier)
2 (7 oz.) jars roast peppers, cut in 1/2" slices
1/2 c. sliced scallions
1/2 tsp. minced garlic
1/3 c. + 2 tsp. white vinegar
1 tsp. paprika
3/4 tsp. chili powder
4 tbsp. oil
1 tsp. salt
Fresh ground pepper

Blend all ingredients except beans in a blender or food processor until smooth. Put 1/2 sauce on each kind of bean. Marinate separately for at least 2 hours. Arrange on plate using black and white beans to form a contrasting design. Pour any excess sauce over top.


OR


WHITE AND BLACK BEANS WITH EQUAL

1 cup finely chopped red onions
2 cloves garlic, minced
2 tablespoons olive oil or vegetable oil
1/3 cup red wine vinegar
1/4 cup chopped red pepper
1/4 cup chopped green pepper
2 tablespoons minced parsley
2 tablespoons Equal? Spoonful*
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (15 ounces) great northern beans, rinsed, drained
1 can (15 ounces) black beans, rinsed, drained
Red and green pepper rings

Saute onions and garlic in oil until crisp tender in medium skillet; remove from heat and cool until warm.
Stir vinegar, peppers, parsley, Equal?, salt and pepper into onions.

Pour onion mixture over combined beans in a bowl; mix well.

Garnish with pepper rings.

* May substitute 3 packets Equal? sweetener.

Black Beans With Rice

INGREDIENTS:
16 ounces dried black beans
1 quart cold water
6 cloves garlic, minced
2 bell peppers, sliced thin
2 large onions, minced
1/4 cup olive oil
2 bay leaves
2 teaspoons salt
1 tablespoon vinegar
1 tablespoon sugar
cooked white rice
PREPARATION:
Soak beans overnight. Rinse well. Put beans in a large kettle or Dutch oven; cover with cold water and boil 1 hour. Add bell pepper, onions, oil, and bay leaves. Cook slowly for about 4 hours or until beans are tender and begin to thicken.
Add salt, vinegar, and sugar just before serving.
Best if cooked a day ahead. Serve on rice with smoked pork, ham or sausage.

White bean:
Greek Bean Soup

INGREDIENTS:
1 1/2 cups of white beans (Great Northern or cannellini) rinsed, soaked 24 hours and drained
2 bay leaves
2 carrots, sliced or cut in chunks
1 large mild onion, grated
4-8 stems of wild celery or cutting celery (or 5-6 stalks of celery), leaves and stalks, chopped
1 14.5 oz. can seeded, peeled, chopped plum tomatoes (or 1 1/2 tablespoons of tomato paste)
2/3 cup of extra virgin olive oil
1 teaspooon of salt (or to taste)
1 teaspoon of pepper (or to taste)
flat-leaf parsley leaves, chopped
8-10 cups of water
PREPARATION:
Place drained beans and bay leaves in a large soup pot with 8 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 30 minutes. Remove bay leaves.

Add carrots, onion, celery, and simmer for 30 minutes longer.

Add tomatoes or tomato paste, salt, pepper, and olive oil, and cook for 30 minutes. The beans should be soft and creamy, but not to the point of disintegrating.
Remove from heat, season to taste, and serve in bowls, drizzled with olive oil and sprinkled with chopped parsley.

Fassolatha bean soup is served warm or at room temperature.

Yield: Serves 4-6

Classic Black Beans and Rice
45 min | 15 min prep | SERVES 4

Ingredients
2 tablespoons olive oil
1/2 cup chopped onions
1/4 cup chopped green peppers
2 cloves of minced garlic
1 (15 ounce) can black beans (undrained)

3/4 cup water
1 teaspoon oregano
1/4 teaspoon sugar
1 package sazon goya (without annato *see note)
1 tablespoon cooking wine or cider vinegar
2 cups cooked white rice

Directions
1Heat oil in a medium sauce pan, sauté onion,green pepper, and garlic.
2Sauté until tender@8-10 minutes.
3Add in remaining ingredients and stir until boiling, reduce heat and simmer until sauce is reduced@ 20 minutes.
4Serve over white rice.
5I like to mash a few of the beans with the back of a spoon to flavor the sauce.
6Note: if you do not have Sazòn Goya an appropriate substitute would be ground cumin, chicken bouillon, and garlic salt to taste

White Beans & Rice

Ingredients
2 teaspoons canola oil (divided)
1 green bell pepper (chopped)
2 small onions (chopped)
4-5 garlic cloves (minced or crushed)
1 1/2 stalks celery (chopped)
1 lb diced ham
2 (16 ounce) bags navy beans

2 bay leaves
2 tablespoons salt
1/4 teaspoon cayenne pepper
6 cups cooked rice

Directions
1Wash beans & add to stew pot, boil for 30-45 minutes.
2Brown ham in 1 tsp of oil until just brown.
3Remove ham & add 1 tsp of oil, onion, celery, bell pepper & garlic, cook until soft. (If sticky, just add a LITTLE water.).
4Add ham back to skillet and cook for an additional 5-10 minutes.
5Add skillet mixture to beans & season with salt, cayenne pepper, & bay leaves. (You can use more or less of any of the seasonings to suit your taste. Taste the liquid to make sure that it agrees to your tastes.).
6Cook in stewpot until beans are soft. (4-6 hours).
7Remove 1 1/2 cups of beans & mash. Add mashed beans back to mixture.
8Serve beans over rice.

Here's a pretty good recipe for black bean brownies I stumbled upon the other day, according to reviews they don't taste like beans at all and provide all of the fiber

Black Magic Brownies

1 (16 oz) can black beans, drain & rinse
2 oz unsweet chocolate
4Tbsp butter or margarine
3 lg eggs
1/2 C brown sugar
1/2 C white sugar
1/2 C all-purp flour
1/2 tsp baking powder
2 Tbsp corn syrup
1 tsp vanilla
1/2 C nuts (opt.)

Oven = 350
In your food processor, fitted w\steel blade, puree the beans until they are smooth. In a small saucepan, melt butter and chocolate, then add the choc mixture to beans and buree for 30 seconds. Add all remaining ingred to bean mixture, except nuts. Blend in the food processor for 1-2 min. Mixture should be smooth and all ingredients combined. The batter will be thin. Blend nuts in w/spoon. Pour batter in a lightly oiled (I use Pam) 11X17" pan and bake 20 min. 9" pan for 25 min, if you want thick brownies. Use clean knife test for doneness.
