Does anybody have any simple eggplant recipe?!


Question: Hey there, so I'm looking for a simple eggplant recipe, I don't have like anything special, i have the eggplant, some flour, peppers, ground boca meatless beef crumbles, some cheadder cheese, carrots, salad, taco shells, what can I make out of this that is simple for an eggplant recipe? I also have olive oil.

My Grandma slices eggplant, blots on paper towel, dips in egg mix, then in rice flour & fries in hot olive oil, until just brown,
Serve hot or cold with salt.

So yummy & very very easy.

You can easily make taco's with the ingrediants you have
cube the eggplant, & peppers, toss with flour, salt & pepper, plus any herbs if you have them & crumbles, shallow fry in olive oils,
Serve in taco shells whilst still warm, layer eggplant mix, cheese, carrot (grated) & salad on top

Sounds yum, in fact, i think i have those ingrediants in my fridge... guess what I'm having for lunch :)

Heat up olive oil about ?" deep in a skillet.

Peel egglplant, cut into thick french-fry shapes. Dip in egg and milk wash, then into seasoned flour (traditional way is bread crumbs, but oh well). Fry on all sides in OO and drain on paper towel. Salt while hot and serve hot, too.

FRENCH FRIED EGGPLANT

1 lg. eggplant, peeled
1 c. sifted flour
1 tsp. onion salt
1/8 tsp. pepper
1 egg, slightly beaten
1 c. milk
1 tbsp. salad oil
Fat or oil for deep fat frying
Salt
Grated Parmesan cheese

After peeling eggplant, cut in 1/2 inch slices. Cut slices in 1/2 inch strips. Mix together flour, onion salt and pepper. Combine egg, milk and salad oil; gradually add to flour mixture, beating until smooth. Dip eggplant strips into batter. Drain well on wire rack. Fry in deep hot fat 2 to 3 minutes, or fry in shallow fat (1/2 inch deep) from 2 to 5 minutes. Turn once. Drain on paper towels. Sprinkle with salt. Serve immediately with grated Parmesan cheese.

MEXICAN EGGPLANT

1 lb eggplant
1/2 cup boiling water
1 onion, chopped
1/2 teaspoon salt
2 cups fresh tomatoes, chopped
1/2 cup onion, finely chopped
2 cloves fresh garlic, minced
1/3 cup green chilies, diced
1/2 teaspoon fresh basil, minced
2 eggs, beaten
1 cup Monterey Jack cheese, grated

Peel and cut the eggplant into 1 inch cubes. Boil eggplant in salted water for 10 minutes. Drain. Combine remaining ingredients, except for the cheese.
Spray or brush a 1 1/2 quart casserole (which has a cover) with oil.

Cover and bake at 375F for 30 minutes. Remove cover and reduce heat to 350F.

Sprinkle top evenly with grated cheese and continue to bake until cheese melts and becomes bubbly.

Serves 4.

OR


EASY EGGPLANT

Eggplant, peeled and cut into 3/8 inch slices
Mayonnaise
Lemon pepper
Parmesan cheese

Coat each side of eggplant with mayonnaise and dust with lemon pepper and Parmesan cheese. Place on Teflon coated pan and bake at 450 degrees for 8 to 10 minutes. Serves 2 slices per person. Serve immediately. Easy.

OR


EGGPLANT (EASY DISH)

2 tbsp. butter
1 sm. onion
1 green pepper, diced
4 tomatoes, peeled & chopped or 1 lb. can tomatoes (cut up)
1 med. to lg. eggplant, cubed (unpeeled)
1/2 tsp. basil
1/4 tsp. oregano
Salt & pepper as desired

Saute onion and green pepper in butter in a large skillet. Add chopped tomatoes and simmer a few minutes. Add eggplant, herbs and seasonings. Cook over medium heat about 15 minutes, or until vegetables are tender.
Serve hot garnished with bacon bits, as a side dish with dinner or as a supper dish (spoon over hot rice). Serves 4 or more.

OR


EASY BAKED EGGPLANT

2 sm. eggplants, cut in 1/2 inch slices
2 tbsp. cooking oil
1 packet Italian herb dressing mix
1 (15 oz.) can tomato sauce
6 cloves garlic
1/4 c. wine
10 oz. sliced Mozzarella cheese
Minced parsley

Marinate 4 garlic cloves minced overnight in tomato sauce herb mixture and wine. Coat medium size casserole with oil and layer the eggplant with remainder of minced garlic. Pour 3/4 of the tomato mixture over eggplant and layer cheese on top. Add remainder of sauce and sprinkle with minced parsley. Bake 45 minutes in 350 degree oven. Serves 4.

Try making this yummy veggie burger!

Steps:
1.Purchase hamburger buns.
2.Purchase or make your patties. Cook the patties according to the package instructions or the recipe. If you want to have grilled vegetables as part of your burger, grill these at the same time. Some suggestions include onion, pepper slices, zucchini slices and/or eggplant.
3.Finish the cooking and flip the burgers onto the buns.
4. Add on the vegetables. You can also add cheese if you want. Include ketchup or some other sauce - salsa is a great addition. Add lettuce and a fresh tomato slice if desired.
5.Serve and enjoy.

Tips:
*If you don't like the taste of the Soy/Veggie burgers, marinate them in Red Wine Vinaigrette(or any other vinaigrette dressing) for about an hour before cooking.

Well, you have the makings of a healthy veggie taco

Slice the peppers
Line a frying pan with olive oil and heat up the boca,
Shred the carrots into thin strips,
With your eggplant, slice them and add some salt on them and allow to sit, remove and saute in a frying pan, add your peppers and carrots.

Get your taco shells, place the eggplant mixture on the bottom, then cheddar cheese then the boca crumble...Yummy!!

Tailor-Made Stuffed Eggplant

Cut off the stems of the eggplant and cut it in half, lengthwise. Boil in salted water until tender, about 10 minutes. Remove and drain. Scoop out most of the center and coarsely chop the scooped out part and set aside.

Chop 1/2 of a pepper and dice one or two carrots (depending on the size).

In a skillet, heat about a tablespoon of olive oil. Add to it the ground boca meatless beef crumbles, scooped out eggplant, peppers and carrots. Cook over medium flame until carrots are slightly tender. Season to taste. Remove from flame and add one slightly beaten egg, mixing well.

Fill hollowed eggplant with meatless beef mixture. Place in a baking dish with enough water to cover the bottom of the dish. Cover with aluminum foil and bake at 350* for 30 minutes.

Remove the foil, add some shredded cheddar cheese on top of the eggplant; return dish to oven for 10 minutes (without foil). Remove and enjoy!
