So I'm thinking about blanching some asparagus, and putting a butter/parsley sauce on top.?!

Question: Is that enough, or should I do something else with it? Or do you have a different suggestion?

That will be just fine to go with the yummy steaks and rice!
Have you got mushrooms you could put in your steak juices?
That would put it over the top!

I usually just cook it in the oven, on a cookie sheet (500 F - 8 min or 350 - 10-12 min), brushed with olive oil & sprinkled with salt. Bf also likes to sprinkle with parmesan when almost done.

That sounds great!

You might want to pair something else with that and keep that as a side. Maybe a nice pork chop or pork loin would be great.

You're on the right track though :)

I like to put butter buds on my asparagus.

I agree with the 1st poster. Asparagus is great roasted (or grilled). Rather than butter, I usually use olive oil and garlic, salt and pepper.

The only other thing I would every consider dressing asparagus with would be a little Mayonnaise.

just about any butter sauce is good
according to the experts and my own experience asparagus should be cooked by standing the bunch upright in water ( tie with kitchen string or use a narrow pot, with enough clearance for the lid) to just under the heads and boil till just slightly crisp, the heads will steam rather then get mushy. if the stalks are tough peel with a potato peeler first. if you bend the fresh stalks they should snap off at the tenderest part. to make it keep better cut the bottoms of the stalks off and stand upright in some water or wrap in wet paper towels and store standing up. use as soon as possible or it will lose flavor and get tough. buy slender stalks and only with tight heads or you risk getting old tough asparagus.

That sounds perfect, Asparagus are pretty good just with butter so added the butter and parsley sauce should make them fantastic....ENJOY!!!
