My cooking plan: good idea or not so good?!


Question: OK, this is a dinner for 3. I got 1.5 lbs of ribeye steak (cost me 20 dollars augh), which I will salt and pepper, and cook on my stovetop with a grill type pan. I'll heat the pan until it is very hot, rub olive oil on the steak and flash cook it over about 5-7 minutes. I'll then let it rest, collect the juices, and combine the juices with some red wine to make a sauce which i will pour over the steaks. I will also add fresh thyme and oregano as a garnish on top of the steak. I'll serve the same red wine to drink. On the side, I'll have some basmati rice cooked with beef broth, with fresh oregano. And finally, I'll have asparagus with a parsley/butter sauce on top. What do you think? It's for my dad and sister who I haven't seen for about a year, so I want it to be good!

Sounds like a winner to me.
Don't be surprised if your smoke detector trips when you cook that steak though. In fact, I'd swap olive for canola oil in this case, otherwise you should be fine.

Sounds perfect, but I would add some cumin to the steak to give it more flavor.

I think it may need a little more in the way of veggies, but as is, sounds fine to me.

One change I would make is:

when steaks are done, deglaze the pan with finely chopped shallot (one shallot or a couple of tablespoons of finely chopped onion if shallot is unavailable). Cook for a few minutes under medium and add 1/4 cup wine and reduce by half. When sauce is done, swirl in one tablespoon butter off the heat to give the sauce a sheen.

i agree with mark's idea of using shallots in the sauce. i would also whisk in some butter to the sauce to improve the flavour and make it glossy.

Wonderful meal. We cook our steaks the same way and they are delicious!

(by the way....5 to 7 minutes is normally a medium well done steak, less time if your dad wants rare or medium rare)

sounds great. maybe try a new store though, you can get 1.5 lbs of ribeye for 12 - 13 dollars over at krogers with a kroger card.

Sounds pretty darn good to me. Be careful with the wine. Dont use so much wine that it takes over the flavor and/or color of the sauce too much. And of course, make sure you cook it down enough.
