Dublin Coddle
1lb/ 500g best sausages
8oz/ 250g streaky bacon
1/2pt/ 300ml/ 1 cup stock or water
6 medium potatoes
2 medium onions
salt and pepper
(serves four)

Cut the bacon into 1in/ 3cm squares. Bring the stock to the boil in a medium saucepan which has a well-fitting lid, add the sausages and the bacon and simmer for about 5 minutes. Remove the sausages and bacon and save the liquid. Cut each sausage into four or five pieces. Peel the potatoes and cut into thick slices. Skin the onions and slice them. Assemble a layer of potatoes in the saucepan, followed by a layer of onions and then half the sausages and bacon. Repeat the process once more and then finish off with a layer of potatoes. Pour the reserved stock over and season lightly to taste. Cover and simmer gently for about an hour. Adjust the seasoning and serve piping hot.

This cake does not keep very well, but that is not usually a problem, as you can be sure it will disappear very quickly! It is best eaten warm with cream or Greek-style yoghurt, and is also perfect with cheese.
Kerry Apple Cake
175g/ 6oz butter
175g/ 6oz caster sugar
2 eggs, beaten
225g/ 8oz self-raising flour
2 medium cooking apples, peeled, cored and chopped
1tsp lemon rind
2tbsp demerara sugar
pinch cinnamon
pinch nutmeg

Preheat oven to gas mark 4/ 180°C/ 350°F, and grease and line a 900g/ 2lb loaf tin. Cream butter and sugar. Gradually add eggs and flour. Stir in apples and lemon rind. Pour into the tin and sprinkle with sugar and spices. Bake for 1- 1 1/2 hours.


Lemon and Vanilla Curd Cake

Curds were once an important part of the Irish diet, and were also useful for paying the rent. Recipes for this delicately flavored cheesecake are found in several eighteenth century"receipt" books.


175g/ 6oz sweet shortcrust pastry

Filling
40g/ 11/2oz butter
50g/2oz vanilla flavored sugar (or caster sugar plus essence)
2 egg yolks
1tbsp (heaped) plain flour
rind and juice of 1/2 lemon
225g/ 8oz cottage cheese

Topping
1tbsp flour
1tbsp sugar
1tbsp butter, melted
1 egg, beaten
caster sugar to dust

Preheat oven to gas mark 4/ 180°C/ 350°F, warm a baking sheet and grease a loose-bottomed flan tin. Roll out the shortcrust pastry until thin, then line the flan tin with the dough, trimming off any excess. Chill pastry case in the fridge. Cream the butter and sugar together until fluffy, then beat in the egg yolks, flour, lemon rind, lemon juice and sieved cottage cheese. Mix well, then spoon into the pastry case. Mix topping ingredients together and spread on top of the curd filling. Place the flan tin on the warmed baking sheet and bake for approximately 1 hour or until the top is lightly browned and slightly firm. Dust with caster sugar and serve cool but not chilled.

IRISH SODA BREAD

1 tablespoon baking soda
1 tablespoon sugar
4 cups flo0ur
2 1/3 teaspoons salt
1/4 teaspoon cream of tartar
2 cups buttermilk
1 tablespoon butter

Thoroughly combine baking soda, sugar, flour, salt and cream of tartar. Make a well in the center. Add buttermilk and mix lightly and quickly with a fork.
Turn out onto a lightly floured board and knead for one minute. Shape into a circle, about 1 1/2 inch thick. Place on a greased cooke sheet. Slask a large cross in the top.

Bake in a preheated 375°F oven for 40-45 minutes.

Cool on a wire rack. Brush top with butter while still warm. Cool before slicing to serve.

OR

IRISH BEEF STEW

4 lbs. beef, chuck or round cut into 2 inch squares
4 tbsp. shortening
2 qts. boiling water
Juice of one lemon
1 tbsp. Worcestershire sauce
2 cloves of garlic, minced
1 lg. onion, minced
4 bay leaves
2 tbsp. salt
1 tsp. pepper
1 tsp. paprika
2 dashes of ground cloves
2 tbsp. sugar
2 small cans white onions
2 lg. cans Irish potatoes
2 bunches carrots, quartered
2 pkgs. pie crust mix
1 c. flour

Dredge meat in flour. Melt shortening until it is smoking hot. Brown meat, add water, lemon juice and Worcestershire sauce. Add garlic, onion and bay leaves. Add dry ingredients. Bring to a rolling boil, then lower heat to a medium setting. Cook slowly for two hours, adding water to cover if necessary.
Add carrots, cook 20 minutes on high heat, add potatoes and onions, let cook ten more minutes or until carrots are tender.

Prepare pie crust as directed on package. Pour stew into one huge or two large casserole dishes. Cover with pie crust. Brown in 400 degree oven until crust is browned.

CORNED BEEF AND CABBAGE

1 corned beef brisket
Several small red potatoes, unpeeled (about a dozen for 4 servings)
3 medium size onions
1 head cabbage

You will need a large crock pot for this. Put the potatoes in the bottom of the crock pot, pierced once with a fork. Put the corned beef on top of the potatoes along with the juices from the bag. Run water in the bag and measure one cup and add to the pot. Quarter 3 medium sized onions and put on top of the meat. Put lid on pot and cook on low 10 hours or a little more. Cut cabbage into about 6 wedges. Pour broth from crock pot over cabbage and steam until tender in a large frying pan. This meal is good served with Harvard Carrots or Corn on the Cob.

How awful am I? I'm all Irish but I dont know any good recipes.Cornbeef & cabbage I know. Now I'm a very good cook but I am a vegatarian & cook "normal" food for the rest of family thats not vegatarian. Now if you want my recipe for homemade chicken soup with dumplings I can tell you that.Even better is my homemade chicken pot pie! For you vegartarians theres veg. pot pie.
