Answers: Roast beef...with roasted veggies ...mashed potatoes and gravy... and glass of sweet iced tea
Fired Up Salmon
1 fillet salmon, skin-on, between 5 to 7-pounds
1 tablespoon butter
Salt and freshly ground black pepper
2 to 3 bunches fresh rosemary sprigs, plus more, for garnish
Lemon or orange slices
Preheat oven to 350 degrees F.
Using small fish tweezers remove pin bones from the length of the salmon and discard.
Place salmon skin side down on tin foil in a large roasting pan and season with a tablespoon of butter, salt and pepper. Place the sprigs of rosemary and lemon slices over the salmon so that they are overlapping and form a tent over the salmon. Wrap each salmon in the tin foil and roast for 15 minutes or until internal temperature reaches 145 degrees F on an instant-read thermometer.
Remove the salmon from the oven and bring to a well ventilated outdoor area. Light the oven dried rosemary on fire over the salmon. Let the ash fall over the salmon leaving streaks of concentrated rosemary flavor.
Using a large fish spatula, remove the side of salmon from the roasting pan and place on a platter. Garnish with sprigs of fresh rosemary and lemon wedges.
How about this then? This torte, which adds bacon as well, can stand alone as a one-dish meal or be served alongside corned beef.
Potato Torte with Bacon, Cabbage and Cheddar

Ingredients:
1/2 head Savoy cabbage, shredded
3 tablespoons Kerrygold Irish butter
1/2 pound Irish traditional bacon, diced
4 baking potatoes, peeled and sliced 1/4-inch thick
8 ounces Kerrygold Cheddar Cheese
Salt and freshly ground black pepper
Directions:
Preheat oven to 400 degrees. Butter a 9-inch quiche pan or pie plate.
In a pot of boiling water, blanch the cabbage for 2 minutes. Drain and refresh in cold water. Pat dry. In a large skillet over medium heat, melt the butter. Add the bacon and cook until browned, about 5 minutes. With a slotted spoon, remove the bacon and toss with the cabbage. Add the potato slices to the skillet and toss to coat in the bacon drippings. Place one-third of the potatoes in the bottom of the prepared pan. Sprinkle with salt and pepper and half the cheese. Top with half the bacon and cabbage mixture, salt and pepper, then repeat with one-third of the potatoes, remaining cheese, bacon and cabbage, salt and pepper, and end with a layer of potatoes. Cover with a sheet of parchment paper and bake for 45 minutes. Remove parchment for last 5 minutes to let potatoes brown. Slice into wedges. Serves 8.
You can take the tea and water it down so your daughter can have it and it wont make it as sweet. Trust me it works.
ummm...mac and cheese for daughter?..and chicken parmesana or chicken marsala for u?..just fry some chicken breast in oil on the stove...then boil noodles..then put chicken on top of noodles, and melt mozzarella cheese over everyhting..
