Cant decide.........?!
Answers: my mom doesnt know what to make for dinner!! somebody please help and give us any ideas!! we are going to the grocery store pretty soon.
Chicken Tortilla Soup
2 boxes liquid chicken broth
2 14oz. cans diced tomatos
1 can black beans
1 can corn or hominy
1tbsp corn masa, or 2 corn tortillas dissolved in the soup
1 can rotel or 1 jar favorite salsa
1 tiny can diced peeled green chilis
--
fresh diced avocados with garlic powder
1 can black olives whole
1 pkg cubed queso quesedilla cheese or other soft cheese
chopped tomatoes
sour cream
tostitos
grilled chicken
Boil the first set of ingredients and serve in bowl over second set of ingredients. This makes a lot of soup, I have for dinner, and lunch the next day, and freeze the rest in Giant zip bags. That way I can have the soup a few weeks later, all i need is more of the second set of ingredients! Good luck!

Spinach and chicken alfredo
Cook and drain chopped 1 pkg (about 10 oz)frozen spinach
Cook fettucini pasta as per directions.
Slice up into very thin strips, chicken breasts, about 1/2 of a half breast per person. Add Salt and pepper to taste. Then Saute in half olive oil and half butter. When juices run clear, sprinkle on garlic powder and 1 t lemon juice per whole breast. Set aside.
In skillet 1/2 pint cream, 1 c milk or half and half, 4 T butter, bring up to but do not boil. Make a slurry of 1/4 c water and 3 T cornstarch. Pour slowly into the hot cream stirring until thickened. You may want to make more slurry if you want it thicker. Add 1/2 t garlic powder, and salt and pepper to taste. Add 1 C grated parmesan cheese, for this I use the cheap stuff in the green can. Have some fresh grated on hand to garnish with. Immediately before serving, add the drained dry spinach and the chicken strips. Pour over pasta! MMMM
You can use fresh spinach pasta and illiminate from the dish and can use this base sauce for many others, like chicken tettrazini, just add mushrooms and some nutmeg. Pour up into casserole with pasta and chicken, then top with sharp cheddar and paprika. Bake 350 until bubbly.
I have that same dilemma usually. Now I have a chest freezer and I keep all kinds of meat in it. In the mornings when I get up for the day, I reach in and get whatever is on top and that is what is for dinner. One we know which meat we are having, we figure out which side dish and vegetables we will add.
Stuffed shells.
1 pkg. jumbo pasta shells
1 15 oz. tub ricotta
1 pkg. chopped frozen spinach
2 jars of pasta sauce
Shredded mozzarella and Parmesan
(You probably have the rest in your house)
Boil the shells. Mix the ricotta with 2 eggs, a big handful of mozz and Parm, dried basil and oregano, minced garlic, salt and pepper. Thaw and squeeze the spinach out, and add that. Stuff the shells with it. In a large baking dish, pour some of the sauce to cover the bottom, put the shells in, top with more sauce, and more cheeses. Bake at 350 for about 45 minutes until it's heated through and bubbly.
Actually you make manicotti with the same filling recipe. Just buy manicotti shells instead!
