Great recipes using roasted garlic???!
Answers: I just roasted 20 heads of garlic - yes 20. I figured if I'm going to stink up the house I might as well make it worth it!! I needed a bit for a dinner I was making but now am just looking for some new, funky recipes to use it in. I was planning to make some garlic cheese biscuits so now they will be roasted garlic cheese biscuits. Any other ideas?? Thank you!
BUTTERMILK BLUE CHEESE & ROASTED
GARLIC DRESSING
1 cup real mayonnaise
1/2 cup buttermilk
3 cloves garlic
1/2 teaspoon olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons fresh parsley, minced
1/2 lb blue cheese
In a small saucepan with a tight-fitting lid, coat whole, peeled garlic cloves with olive oil and saute over medium heat, turning as each side lightly browns/roasts. Do not over-brown or garlic will become bitter. When garlic becomes soft, it has finished roasting.
Combine with remaining ingredients in a blender. Refrigerate for 24 hours to allow flavors to meld. Store in a 1 pint canning jar or plastic container with a tightly fitting lid.
AND
ROASTED GARLIC MOZZARELLA MASHED
POTATOES
3 lbs yukon gold potatos
half and half
1 cup grated mozzarella cheese
5 cloves garlic
salt and pepper
1 egg
Peel potatoes, halve and boil for 25 min. Do not cut up into little pieces as you will make the mashed potatoes watery.
Coat garlic on skin with olive oil and bake at 350 for 15 min.
Set aside drain potatoes and add enough half and half while mashing to get the consistancy you want. Squeeze garlic out of skins into the mash, add egg and cheese, mix rapidly and add salt and pepper to taste. Good sea salt goes a long way for taste.
Serve promply, don't let it sit around as the cheese loses it's stringy effect.
AND
BAKED BRIE AND ROASTED GARLIC
4 lg. heads garlic (at least 2 1/2 inches in diameter)
1/3 c. olive oil
1 tsp. coarse salt
4 (4 oz.) wheels brie, toasted baguette slices
Preheat oven to 350 degrees. Remove all but one layer of skin from garlic; do not expose flesh. Arrange garlic tightly in small baking dish. Drizzle with oil. Sprinkle with salt. Cover with foil. Bake until garlic is very tender, 75 to 90 minutes.
Preheat broiler. Score large X in top of each wheel of cheese. Set each in small baking dish. Broil until browned and bubbly, 5 to 7 minutes. Serve immediately with garlic and toasted baguette slices.
Makes 8 servings.
AND
ROASTED GARLIC-PEPPER DIP
2 lg. heads garlic, tops removed
1 red pepper or 1/2 c. jarred roasted pepper, rinsed & drained
1 c. light sour cream
3/4 tsp. salt
1/4 tsp. freshly ground pepper
Preheat oven to 350 degrees. Roast garlic in small baking dish 45 minutes or until tender. Transfer to wire rack to cool. Meanwhile, if using fresh red pepper, broil 5" from heat source 20 minutes, turning every 5 minutes, until skin is blistered and browned. Cover and cool.
When garlic is cool enough to handle, squeeze enough paste from cloves to measure 3 tablespoons. In food processor, puree garlic, red pepper, sour cream, salt and ground pepper. Makes 1 1/2 cups. (Can be made ahead. Cover and refrigerate up to 24 hours.) Arrange bowl of dip on large platter with vegetables, fish and crackers. Makes 24 servings.

Mashed Potatoes. I use a stick of butter, potatoes, a head of roasted garlic, and some sour creme!

Aioli is a good option....you can make it by simply adding roasted garlic to mayo....home made or bottled.
Roasted garlic goes great in mashed potatoes...
Mixed with butter for toast.or to use in rice and pasta dishes....
mix with olive oil and spread on italian bread.Yum
I like Garlic seared green beans. It's healthy and tasty. =)
