Do you have a recipe to share with me for baked Mac & Cheese?!


Question: Oven Baked Macaroni and Cheese
2-3 cups macaroni noodles , uncooked
1/4 cup hard butter or margarine
1/4 cup flour
3 cups milk
2 cups grated cheddar cheese , divided
3/4 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon cayenne powder
1/2 teaspoon dry mustard
3/4 cup dry breadcrumbs or crushed crushed unsalted crackers
Cook and drain macaroni; rinse with cold water. Meanwhile, melt butter or margarine either in a pot on the stove or in a microwavable container in the microwave. Stir in flour. Add milk and cook, stirring frequently (5 - 6 minutes in the microwave, stirring every minute) until thickened. Add seasonings and continue cooking on stove or in microwave for 1 - 2 minutes longer. Add 1 1/2 cups cheese and stir until melted (may need to be cooked for 1 more minute to melt the cheese). Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. My dad always layered the noodles and sauce, so that's an option, too. Sprinkle the breadcrumbs on top, followed by the remaining 1/2 cup cheese. Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

Honestly, my favorite is Tyler Florence's Mac and Cheese with Bacon recipe
Mac 'N Cheese with Bacon and Cheese


Kosher salt
1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.

Preheat the oven to 400 degrees F.

In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.

While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.

To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

fishineasy's recipe is great and it's pretty classic but i like to add some panko crumbs (japanese bread crumbs) with the cheese topping that way it adds a bit of texture.

Believe it or not, I actually found a great Mac & Cheese recipe in the Reader's Digest.

Basically you make a white sauce, add cheddar, Parmesan, and mozzarella cheese, then mix in the macaroni, top with a little more cheddar, bake for 20-30 minutes and you're done!

You can just make the box recipe & bake in a casserole.
Or boil a batch of pasta shapes in salted water & drain.
Make a white sauce, by bringing 1 cup milk to a simmer.
Mix 1 tbsp corn starch or flour with 1/4 cup cold water.
Add to hot milk, stirring in with a whisk until thickened.
Add 1 cup grated cheese(s) cheddar/mozzarella/parmesan.
Pour over drained pasta in casserole dish, & stir lightly.
You can add cooked chopped onion, or sliced mushrooms.
Sprinkle more cheese(s) over top, bake at 400F in oven.
Ready when bubbly, turn up heat last 10 minutes to brown.

8 oz box of elbow macaroni.
2 tablespoons of butter
2 tablespoons of flour
12 ounces of good cheddar cheese
1/2 chopped onion
1 cup milk
salt and pepper

cook the macaroni for about 6=7 minutes. sautee the chopped onion in the butter. as soon as the onions are translucent. add the flour and cook for a minute. add salt and pepper, cup of milk and cubed cheese until melted. mix the cooked macaroni with the cheese mixture and pour in a baking dish. cook for 30 minutes in a 350 degree oven.
