My mom said she would fry me some corn fritters if I got her a recipe...so I need a recipe, got one?!


Question: Deep Fried Carrot Fritters
Ingredients
10 carrots cleaned
2 eggs
3 tbsp flour
2 tbsp chopped pecans
1 tbsp sugar
1 tbsp baking powder
Salt and cracked black pepper to taste
1 c flour
Oil for deep frying

Boil carrots in a pot of lightly salted water until tender. Place in food processor and puree. Add eggs, 3 tbsp flour, nuts, sugar and baking powder. Using the pulse button, blend about 5 seconds. Season with salt and pepper. Adjust sweetness with sugar to taste. Roll mixture into three inch oblong fritters, dust in flour and fry in oil until they float. Drain on towel.

Ive never heard of a corn fritter but you have me intrigued...I may try to make it too!!

CORN FRITTERS

1 c. Bisquick
1 egg
1/2 c. milk
1 can corn, drained

Combine all ingredients and let stand 5 minutes. Fry in deep hot fat a teaspoonful for each fritter. Turn when browned on one side. Serve with syrup or honey.


OR


CORN FRITTERS

1 egg
1/4 c. milk
1/2 c. flour
1/2 tsp. salt
1 can drained corn
1/2 tsp. baking powder

Put all ingredients into blender container. Cover and blend 15 seconds. Drop from tablespoon into deep hot fat. Fry at 375 degrees until crisp and brown. Yield: 1 dozen small fritters.

Very good recipe. I've made them before.

INGREDIENTS:
2 cups flour
1 tablespoon baking powder
1/2 tsp. salt
1/4 cup sugar
2 eggs, beaten
1 cup milk
1/4 cup melted butter
1 can whole kernel corn, drained (or about 1 1/2 cups frozen, thawed or fresh)
powdered sugar or syrup

PREPARATION:

Sift flour, baking powder, salt and sugar. Combine eggs, milk and butter. Fold in dry ingredients [add more or less flour - enough to bind batter]; add corn last. Drop by tablespoons into hot vegetable oil and deep fry about 5 minutes or until golden brown.
Sprinkle with powdered sugar or serve with syrup. Serve corn fritters warm.
