Whats a good recipe for chicken salad?!

2 whole boneless chicken breasts
1 stalk celery
1 onion , quartered
1 cup celery , chopped
1 1/2-2 cups mayonnaise (depending on how wet you like your chicken salad)
2 tablespoons lemon juice
salt and pepper
2 tablespoons fresh parsley , chopped
1 teaspoon dill seeds

Place chicken, celery stalk and onion in saucepan with water to cover.
Bring to a boil and simmer 20 minutes or until chicken is done.
Drain and discard onion and celery.
Let chicken cool.
In a food processor chop chicken.
In a medium sized bowl combine chicken with mayonnaise, salt& pepper, parsley, dill seed, chopped celery and lemon juice.
Cover and refrigerate until chilled.

My wife makes a really good chicken salad. She cooks the chicken and then cuts it into chunks about 1/2 inch square. She puts mayonaise, dill pickle relish, and celery salt. It is delicious.

I had it for lunch today (on crackers)

Chicken breasts, cooked and chopped, celery diced, mayo, honey, taragon, salt and pepper, garlic salt, and walnuts... It's delicious!

buy some chicken breasts and bake them in the oven until finished. (some people say boil them but boiled chicken to me is BLEH) cut them up or shred them add celery onion maybe some green or red pepper if you like and then some lawry's seasoned salt and mayo.

fresh chicken, cut it into bite size chunks and cook in a pan with a bit of oil and season...sometimes its good just to add some chicken seasoning powder.
i always like chicken salad with bacon and avocado...
so when chicken has been in pan for about 3 mins or so i cut the bacon up and chuck it int he pan too and cook til chicken is brown and bacon crispy.
get mix of salad leaves., add the cut up avocado and some tomatoes too, then chuck in the hot chicken and bacon.
add some dressing or cheese or whatever extra like mayo and voila!

go and buy chicken breast pre grilled and just heat them up
cut them into pieces and put them on your salad.

Avocado Chicken Salad

Serves 8

For a beautiful presentation, cut the avocado in half, carefully scoop the meat from the shell, and then stuff the shell with the chicken salad. Garnish with dressing and a lemon wedge.

3 cups cooked, diced chicken
3 cups cooked white rice
2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice (to prevent browning)
3/4 cup chopped onion
1 cup mayonnaise
1 to 2 teaspoons pepper
1 teaspoon salt
1/4 cup chopped fresh parsley

Mix all ingredients and chill. Pass with avocado dressing.

AVOCADO DRESSING

1 large avocado, peeled and mashed with 2 tablespoons lemon juice
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon Worcestershire sauce
1/3 cup chopped onion
2 cloves garlic, minced
1 teaspoon salt
Dash of cayenne pepper

Place all ingredients in a food processor and blend until smooth. Chill and serve alongside chicken salad.

In the summer we have tomatoes straight from the garden, stuffed withb chicken salad.

Boil 3 chicken breasts. Allow to cool in the seasoned broth.

Shred chicken. Mix with 2 T. fresh lemon juice, mayo, celery, diced red onion, and garlic herb seasoning.

** Add boiled egg if desired or pickles.

Stuff tomatoes and dust with paprika.

Chicken, celery, apple, miracle whip. OR

chicken, celery, red seedles grapes, Miracle Whip, and pecans

combine and stir into chicken mixture....best if let to set for a few hours in the fridge

Chicken boiled, baked or store bought some lettuce mayo and pepper to taste. Super easy and super good if its too plain you can add whatever extras you like . Whenever i make it i always have to make extra everyone loves it.

Ingredients:

1 c Red cabbage
1 c Napa cabbage
1/2 Carrot; julienned or

1 Green onion; chopped
1 tb Sliced almonds
1/3 c Chow mein noodles

1. Preheat oil in deep fryer or deep pan over medium heat. You want the
temperature of the oil to be around 350 degrees.

2. Blend together all ingredients for dressing in a small bowl with an
electric mixer. Put dressing in refrigerator to chill while you prepare the
salad.

3. In a small, shallow bowl beat egg, add milk, and mix well.

4. In another bowl, combine flour with corn flake crumbs, salt and pepper.

5. Cut chicken breast into 4 or 5 long strips. Dip each strip of chicken
first into egg mixture then into the flour mixture, coating each piece
completely.

6. Fry each chicken finger for 5 minutes or until coating has darkened to
brown.

7. Prepare salad by tossing the chopped romaine with the chopped red
cabbage, Napa cabbage, and carrots.

8. Sprinkle sliced green onion on top of the lettuce.

9. Sprinkle almonds over the salad, then the chow mein noodles.

10. Cut the chicken into small bite-size chunks. Place the chicken onto the
salad forming a pile in the middle. Serve with salad dressing on the side.
Makes 1 dinner-size salad.

It's basically hardboiled eggs, celery and mayonnaise. There's a lot of other salad recipes there to mix and match. I have a feeling mixing the Tomato salad recipe with the Chicken salad recipe will come out quite nice.
