Measuring Herbs?!
Answers: I have a recipe that calls for 1/4 cup freshly chopped parsley, but I only have the parsley flakes (in the jar), how much should I use?
When using dried herbs you use 1/3 less, as a rule. In this case I would use about a tablespoon and a half and it will be fine, I'm sure.

Dried herbs are stronger in taste, use much less.
Thyey're not critical, it's a matter of taste, experiment.
You can always add more, you can't remove any.
The dry is 3x stronger than fresh. So use only 1/3 of the dry herbs when subbing for fresh.
Likewise, if a recipe calls for dry, and all you have is fresh, use 3x as much fresh as you would dry.
1/8 cup. dried herbs have all of the water removed from them which reduces their size by half. You could add a teaspoon or so of water to rehydrate them too.
The best way to handle this is by taste, and one more thing always add dry herbs at the end or they will burn even before they give any aroma. Then you will have a burnt flavor in you dish. Yeah but keep adding the herbs until you think its right.
