Use everything but the parsnips to make a lasagne-type dish, add whatever herbs you fancy. Do the chopped parsnips on the side in a honey and garlic glaze, with thyme. If you like you can also turn this into a soup.

melt butter in a saute pan on low heat. ....add minced garlic& peeled and grated parsnips...cook for 5 mins.add mushrooms, broccoli,& tomatoes(blanched, peeled&seeds remove)cook for another 2 mins.
Remove veggies to a platter ,,,,in same pan melt 4 T butter,,,melt...add 3T flour....cook for 1 min.slowly add 2 cups milk(or broth made from a few broccoli spears)....when hot add brie(rind removed.)stir until thick...
remove 11/2 C cream sauce...and set aside.
return veggies to saute pan .and mix with remaining sauce.

prepare lasagna sheets as directed,
cut in half...add 3 T veggie mixture to pasta....roll....place seam side down in baking dish....when all veggies are used..pour remaining sauce over lasagna rolls.bake at 350 for 25 mins
