Mac-n-chz!! Try some yogurt or fruit on the side..like a fruit kabob with yogurt as dipping sauce..cheese quesadillas are easy and quite a hit with my daughter..

Try chicken salad. If the peolpe don't like the salad, the will probable eat the chicken. If not, you could bring many types of meats and breads to make what the person wants.

BBQ chicken with potato salad and baked beans. I make hamburger patty's up just like my meatloaf, make them thick. Place in skillet and cover on medium heat. After they are done I take them out and put 2 tbsp. of flour in the pan with a little salt and pepper. Stir it around until it has all the grease coated. You my have to add 1 more spoon of flour. Then add water. This will make gravy, then place your patty's back in and cover. Let simmer on low heat until you are ready to serve. I serve mine with mashed potatoes and green beans.
i don't know how many people you need to feed but i'd say everyone is picky in a different way... so you could either ask them individually what they don't eat and then try to cook something acceptable for everyone or you could make a dinner that each person "assembles" themselves. an example of that would be fajitas or a tapas style dinner - different bits so that everyone can find something they like. i think it also looks great on a table (lots of different dishes, different colours) and it's fun to eat. if you have time to plan everything you could prepare most things a day ahead and then just relax with a glass of wine before your guests arrive :)
