Calling all carbless recipes. I'm trying to cut back on my carbs and looking for some carbless/low carb dishes!

***Low Carb Meatloaf***

Tomato Topping:
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/4 cup sugar substitute (recommended: Splenda)
2 teaspoons white vinegar or water
2 pounds ground chuck (may use meat loaf mix with ground pork)
2 eggs
1/2 cup grated Parmesan
1/4 cup red onion, diced small
1/4 cup roasted or fresh red bell peppers, diced
2 tablespoons chopped fresh parsley leaves
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 pound prosciutto, or any type of ham, thinly sliced
1/4 pound provolone cheese, sliced


Preheat oven to 350 degrees F.
In a small bowl, mix together the tomato topping ingredients. Set aside. You may add a few drops of water to thin to a ketchup consistency.

In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.

Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.

Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Place in oven and bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165 degrees F. Drain fat and let rest at least 10 minutes before slicing.

****Mock Garlic Mashed Potatoes****

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

LOW CARB LASAGNA RECIPE
Ingredients
Meat Sauce
1 1/2 lbs of ground sirloin or turkey breast or Italian sausage
3 cloves of chopped garlic
2 chopped onions
2 tbspn of italian seasoning
2 tbspn of olive oil
1 tsbn of red pepper flakes
1 (10 oz) package of frozen chopped spinach
1 (28 oz) of can tomato sauce
1 pkg sliced mushrooms
1 chopped red pepper
1 tspn of fennel seeds
1 dash of salt
1 (15 oz) can of diced tomatoes
1 cu of red wine or vodka
1 dash of pepper
Mock Noodles
2 large eggplant, peeled,sliced lengthwise into ? inch noodle-like strips
1 dash of pepper
cooking spray (olive oil spray is best)
1 dash of salt
Cheese Mixture
2 c of low-fat ricotta cheese
3 c of shredded lowfat mozzarella cheese
3 chopped green onions
1/2 c of parmesan cheese
2 eggs

Directions
Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
Preheat your oven to 425 degrees.
Cook those for 5 minutes on each side
Lower oven temp to 375.
Grab a skillet and brown meat, onion and garlic in olive oil for 5 minutes.
Take the red pepper and mushrooms, and cook those for 5 minutes.
No your going to add spinach, tomatoes, spices and wine and let that simmer for 5-10 minutes
Blend ricotta, egg and onion mixture.
in bottom of your 9” x 13” glass pan spread 1/3 of meat sauce .
Then your going to start the to layer. Layer ? eggplant slices, ? ricotta, 1/3 mozzarella and parmesan.
Repeat that step.
Add your last layer of sauce, then mozzarella cheese and parmesan on top.
Cover with foil and bake for 1 hour at 375 F
Now remove the foil and allow the cheese to brown for about 5 minutes or so.
When done let it sit fot 10 minutes or so.

I don't know if you like shrimp or not but this recipe is low fat, low carb and amazing. You can use 1 to 2 lbs of shrimp deveined and cleaned (without shell and tail) put the shrimp in a ziplock back and add the following:
1 1/2 tbs. of olive oil
2 cloves of garlic cubed
1 fresh lemon squeezed
basil
red pepper
black pepper
salt
parsley

Let the shrimp marinade for 1/2 hour in the refrigerator and then put on a george forman grill...they only need to cook for about 5 mins.

before i answer this - a warning: be careful! cutting out the good carbs is very bad for you, i learned that the hard way :P

i personally like pasta without the noodles....so bascally a stirfry with the meat and veggies you want, and pasta sauce and parasean cheese. You can even grate veggies (such as squash) to be like the base or noodle.

its amazing how many dishes you can make with a pan, diced meat and veggies and your choice of sauce (can use canned soup as well, very tastey)....you can also turn these into casseroles by baking them.

and every type of salad or egg dish are great.

jsut avoid anything white (sugar, pasta, potatoes, white bread) but dont cut out the grain...good luck!

Roasted Herbed Mediterranean veg with roast garlic cloves mixed with rocket leaves , serve with a red wine and balsamic reduction mmmmmmmmmmmmmm

To make the reduction use a glass of good red wine and a cup of caster sugar . bring to the boil and then simmer until slightly thickens add a good splash of Balsamic vinegar and reduce for a few more minutes . Leave to cool and it becomes sticky . you can then drizzle it over your dish and enjoy . ( I know its got shed loads of sugar in but you really only need a small amount to dress your dish , its also great for lots of other dishes and keeps well in the fridge for a good few days etc)

I did the low-carb one for a year. I liked the food a lot, but my family wasn't too keen on it, so we are doing our own this year. It really, really made my life much easier, and simplified menu planning and dinner prep for me when I used it, though.
