Question: we just got a grill that, well, grills. it also has an attachment to make waffles, and sandwhiches.

Some good whole grain bread with lots of veggies inside. Like spinach, cilantro, mushrooms, tomatoes, some imitation cheese. Put a little olive oil on the out side of the bread on both sides and grill. It's really good.

Spiced Apple Waffles

Laced with apples and fragrant with pumpkin pie spice, these waffles are perfect for a cool autumn morning.

3 eggs, separated
3/4 cup buttermilk, warmed
3/4 cup milk, warmed
8 Tbs. (1 stick) unsalted butter, melted
1 Granny Smith apple, peeled, cored and grated
1? cups all purpose flour
1? tsp. baking powder
3 tsp. pumpkin pie spice
? tsp. baking soda
? tsp. salt
? up sugar
1 cup toasted pecans, chopped
Sweetened whipped cream for serving

Preheat an oven to 200°F. Preheat a Belgian waffle maker according to the manufacturer's instructions.

In a large bowl, whisk together the egg yolks, buttermilk, milk and butter. Add the grated apple and stir to combine.

In another bowl, whisk together the flour, baking powder, pumpkin pie spice, baking soda and salt. Add the flour mixture to the egg yolk mixture and whisk until smooth (some small lumps are OK).

Using an electric mixer fitted with the whisk attachment, beat the egg whites on medium speed until soft peaks form, about 1 minute. Increase the speed to high, add the sugar 1 Tbs. at a time and beat until stiff, glossy peaks form, about 3 minutes. Fold half of the whites into the batter, then carefully fold in the remaining whites.

Sprinkle 2 Tbs. of the chopped pecans onto the waffle maker. Pour about 2/3 cup of the batter onto the surface. Cook the waffles according to the manufacturer's instructions until golden brown, about 5 minutes. Transfer the waffles to a baking sheet and keep warm in the oven while you cook the remaining waffles.

Serve the waffles with whipped cream. Makes eight 6-inch Belgian waffles.

Pecan Waffles with Roasted Pecans and Banana Syrup

2 cups all-purpose flour
? cup ground lightly toasted pecans
1? tsp baking powder
? tsp salt
4 eggs, separated
? cup sugar
1 tsp vanilla extract
? cup melted butter
? cup cold butter, cut into pieces
2? cups milk
nonstick cooking spray to coat waffle iron
1 cup pecan pieces
? cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

Preheat the waffle iron according to manufacturer's instructions and preheat the oven to 200 degrees F.
Combine the flour, pecans, baking powder and salt in a medium mixing bowl and whisk to combine. In another bowl, combine the egg yolks and sugar and whisk until pale yellow. Add the vanilla extract, 1/2 cup melted butter, and milk, and whisk to blend. Combine the egg and milk mixture with the flour mixture and whisk until just combined. Do not overmix.
In the bowl of an electric mixer, beat the egg whites until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix.
Using a pastry brush, lightly coat the waffle iron with some of the vegetable oil. Pour enough batter into the iron to just barely cover the waffle grid. Close the waffle iron and cook according to manufacturer's instructions, or until golden brown, 4 to 6 minutes. Transfer to a baking sheet and keep warm in the oven while you prepare the remaining waffles.
In a saute pan, add the remaining 1/2 cup of butter and the pecan pieces. Cook, stirring occasionally, until pecan pieces are light golden and fragrant, 2 to 3 minutes. Add the banana slices and cook until light golden and soft, 2 to 3 minutes. Add the syrup and bring to a simmer. Serve with the warm waffles.

I make veggie panini sandwiches and they're awesome! I saute mushrooms, onions and peppers and get them cooked up a little bit (you could use any veggie you wanted). Put that mix on some bread and add cheese and tomatoes. Get some ciabatta bread or maybe sourdough and then add it to the grill. It's really good. Good luck

Breakfast Burrito/Sandwich maker

Ingredients
1 small flour tortilla
1 egg , scrambled
3-5 pinches shredded cheese
1 tablespoon chopped bell peppers
1 tablespoon onions
salsa (optional)
1 tablespoon prepared shredded potatoes (optional)
Directions
1Take (1) small soft shell burrito and fill with scrabbled egg (prepared ahead of time), shredded cheese, chopped peppers& onions, (some like a spoon of salsa), use what ever you like even shredded potatoes in the dairy section.
2Now place in the iron and fold over the sides and then the ends and place the top on.
3Cook to your liking and YOU WILL NOTICE THAT THE POCKET STAYS SEALED.

Peanut Butter, Banana Stuffed French Toast With Sandwich Maker

Ingredients
4 slices whole wheat bread
2 tablespoons peanut butter
1 medium banana , sliced
3 eggs
2 tablespoons milk
1 pinch cinnamon (optional)
1/4 cup sliced and sugared strawberries , with (optional)
sugar
maple syrup
cooking spray

Directions
1Plug in and turn on your sandwich maker.
2If your bread is the "larger" size, cut the bread to fit your sandwich maker.
3Slather 2 pieces of bread with as much peanut butter as you like.
4Lay sliced bananas on the peanut butter to cover sandwich.
5Place the last two slices of bread on top of the bananas (if you really like peanut butter, you may peanut butter them first).
6In a small dish, beat together eggs, milk and cinnamon.
7Spray sandwich maker down with Oil Spray.
8Take each sandwich and turn it in the egg to coat.
9Place in sandwich maker and close until finished.
10On a plate place the sandwiches. I like to top with some strawberries n sugar (like shortcake strawberries) and a little maple syrup.

Vegan Gingerbread Waffles
INGREDIENTS:
1/4 cup sugar
1/4 cup margarine
Egg replacer for 2 eggs
1/2 cup molasses
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
dash salt
1 1/4 cups flour
3/4 tsp baking soda
1/2 cup hot water
PREPARATION:
Combine the sugar, margarine and replacer, mixing until smooth and creamy. Add molasses and stir to combine.
Combine the remaining ingredients, except the hot water. Slowly add to the sugar and margarine mixture, stirring to combine.


Add hot water and beat until a smooth batter is formed.
Bake in a waffle iron until done.
