I love soup!! Does anyone have a good soup recipe?!
Answers: I only like home made soup but mine never comes out right. Canned soup has MSG and other chemicals also to much salt so I won't eat that. My chicken soup never has enough flavor. Any suggestions? Thank You for taking the time to help me!!
FRENCH ONION SOUP
6 large brown onions
3 cloves garlic
bay leaf
thyme
beef stock
red wine
Thickly slice onion and chop garlic. Sauté in pan with a drop of olive oil, stirring occasionally until onion is caramelized. Add 2 pints of stock, one cup of red wine, two bay leaves and some thyme. Bring soup back to the boil, serve with toasted cheese croutons.
Grown Up Tomato Soup - serves 4 -
* 1 kg (2 Lbs)Tomatoes, diced
* 1 small Onions, diced
* 2 cloves Garlic
* 3 Tablespoons Vegetable Oil
* 1 Tablespoon Basil, dried
* 1 Tablespoon Oregano, dried
* 1/2 teaspoon Thyme, dried
* 1/2 teaspoon Marjoram, dried
* 1/2 teaspoon Rosemary, dried and ground
* 750ml (3 Cups) of Beef Stock
* 2 Tablespoons Tomato Paste
* 1 Tablespoon Gin*
* Salt
* Pepper
* 4 Tablespoons Crème Fraiche
- In a large pot sauté the onions and garlic in the vegetable oil until the onions are soft. Add the tomatoes and all the dried spices and cook in the pot for 15 minutes with the lid on. Then pour in the beef stock and let cook for another 5 minutes. Then take off the heat and put entire soup into a food processor or blender and purée. Then return to pot and to medium heat and add the tomato paste and the gin. Stir until completely mixed in.
- Once the soup is in individual serving bowls add 1 Tablespoon of Crème Fraiche to each bowl and stir in. This will make the soup much thicker.
French Canadian Pea Soup
One small bag of whole yellow peas
1/4 lb. salt pork
1 diced onion
1 cups carrots, thinly sliced
Boil everything but the carrots for 2-3 hrs. Add carrots and boil another 15 min..
:::Chicken Tortilla Soup:::
Yummy Mexican chicken soup that is super easy, just dump the ingredients in the crock pot and let it cook! It is delicious!
2 cans chicken broth/stock
2 cans crushed tomatoes
1 can diced tomatoes (can use another can of crushed if you don't like chuncks or vice versa)
1 can whole corn kernels
1 can black beans
1 small can green chilis (optional to taste)
1 14oz can enchilada sauce
1 small onion (diced)
2-3 cloves of garlic (minced)
2 tablespoons fresh cilantro
3 teaspoons cumin
3 teaspoons chili powder
Salt and Pepper to taste
1.5 lbs chicken (cut into pieces and cooked, I use breasts, but any meat will do, sometimes I use leftover meat from a whole chicken and just shred it up... whatever I have on hand really. Sometimes I even make it with beef!)
I garnish with sourcream, cheddar cheese and tortilla chips.
I just dump all of this in the slowcooker and let it go for a few hours, sometimes I need to add a little extra chicken stock, depending on how thick it is, this is kind of one of those recipes I add to every time... =] Let me know if you try it! My family just loves it!
Little Miss Piggie Soup Recipe
1 to 1 1/2 pounds lean pork
1 8 ounce can diced tomatoes (do not drain)
1 4 ounce can diced/chopped green chile peppers
1 4 ounce can diced/chopped jalapeno chile peppers
2 baking potatoes
1 cup water
1 package Taco seasoning mix
1 package Hidden Valley Ranch dressing mix
1 cup frozen corn
In crock pot, add pork, taco seasoning mix, and water. Cook on high for 2 hours or until pork is fully cooked and can be shredded. Take pork out of liquid and shred meat. Replace into crock pot. Chop up potatoes into small cubes. Place all remaining soup ingredients into crock pot. You can cook this all day on low, but at least 2 hours.
Serving Ingredients:
Tortilla chips
Shredded Cheddar, Monterey Jack or Co-Jack cheese
Sour Cream
To serve:
Crush a handful of tortilla chips and place in bottom of bowl. Top with Little Miss Piggie Soup. Sprinkle on the shredded cheese of your choice and a dollop of sour cream. Remember your bib!
Chicken and Dumplings
You need to use a whole chicken, a hen is best, with lots of fat on it. Place the entire chicken in a large pot; boil for about an hour; pull the chicken out, and pull all the meat off; set the meat aside.
Then take 2 cups of baking mix (bisquick or generic) and add 1/3 cup of milk or enough milk to make a dough. Then bring the soup water to a boil, and drop the dough by teaspoons into the water. The fat will cook the dough into gorgeous dumplings if you will cook on high uncovered for 10 minutes; cover and lower heat to medium and cook for another 10. Then add your chicken meat on top and voila -- Chicken and Dumplings! Yum. Yum!
*You can also just use canned biscuits!
Love Lobster bisque, I get it everytime I go to Chowder Pot resturant. Its like a creamy lobster soup soo good with the bread they serve!!

2 medium carrots, s;iced
Small onion, diced
2 garlic cloves, minced
500ml stock, veg or beef
half a small green cabbage, shredded
100g green beans
1 tbsp tomato puree
half a teaspoon dried basil
quarter of a tsp dried oregano
quarter of a tsp salt
half a courgette, diced
Spray a large saucepan with low fat cooking spray, heat. Saute the carrot, onions , and garlic, over low heat until softened, about 5 minutes. Add stock, cabbage, beans, tomato puree, basil, oregano, and salt. Bring to a boil. Reduce heat, simmer, covered, about 15 minutes or until beans are tender, Stir in the courgette and heat for 3-4 minutes. Serve hot.
You can puree this if you like. Believe me, this is gorgeous.
