Quick....Zucchini recipes anyone?!


Question: Three kids and introducing zucchini for the first time. Any quick, easy recipes that might involve cheese and/or butter? Needs to be just basic ingredients (too much and they won't even try it).

Let them help you slice the zucchini and they might be more inclined to eat it..we like to cut it in long strips and fry in 1 tsp butter 1 tsp olive oil salt and pepper on med heat..then let the kids top with their favorite cheese..mine liked Parmesan and mozzarella on his. cook till just browned a bit.

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts


DIRECTIONS
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

My grandmother introduced me to zucchini using "zucchini pie"...it's actually a quiche. :-)

Recipe:
INGREDIENTS
3 cups zucchini, shredded using box grater
1 onion, chopped
4 eggs, beaten
1 cup sharp cheddar cheese
1 tsp oregano
ground black pepper to taste
1 9" deep dish pie crust

-Preheat oven to 350 degrees F
-Cook down onions, zucchini, oregano, salt, and pepper until translucent (about 5 minutes) on medium to medium high heat..
-Allow vegetables to cool 5 minutes while you mix together beat the eggs and mix in the cheese.
-Add cooked vegetables to the egg and cheese mixture. Stir
-Bake for 30 minutes, or until lightly brown.

My little guy loves it sauteed with canned or fresh tomatoes, and a bit of garlic or onions chopped really small. Then you can add the cheese if you want. If I want a quick meal....I add more tomatoes and olive oil and toss it all with leftover pasta...

1 teaspoon ground cinnamon

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

This might be a stretch but I'll try anyways. Got a mandoline? The Italian style vegetable processing machine? Silmply julienne long strips of the squash excluding the seeds. It will look like spaghetti. A TB or two of oil in a pan and a quick sautee`. Add your favorite marinara sauce and tell the kids that they are eating Momma's Famous Vegetable Spaghetti.
Don't forget the cheese! We all love cheese!

I slice zucchini lenth wise into thin strips the lay them on a baking sheet. The I sprinkle them with a little bit of olive oil, salt, pepper, and parmesan cheese an bake at about 450 for 10 minutes or so.

You could also make zucchini bread that is always good.
Zucchini Bread

3 eggs
2 cups sugar
1 cup vegetable oil
2 cups grated zucchini
3 tsp vanilla extract
1 tsp salt
1 tsp baking soda
? tsp baking powder
3 tsp cinnamon
3 cups flour


1.Preheat oven to 350
2.Beat eggs until light and foamy
3.Mix in sugar, oil, zucchini, and vanilla.
4.Combine flour, salt, baking soda, baking powder,
and cinnamon in a small bowl
5.Add to egg mixture
6.Stir until well blended
7.Bake for 1 hour
8.Cool on wire rack

fry zucchini.wen soft add cream cheese and cheese of ur choice.add only enuff cream cheese to make it creamy

Best way to introduce kids to a new veggie is to hide it in a sauce! lol Here's a good, quick recipe that may work for you:

In an 11"x7" lightly greased, glass baking pan, add a package of plain, frozen cheese-stuffed ravioli that have been defrosted. In a bowl, combine a bottle of prepared spaghetti sauce, a couple of shredded or diced zucchini and 1/3 cup Parmesan cheese. Pour this over the ravioli and mix well. Cover with foil and bake in a preheated 350* oven for approximately 25 minutes. Remove foil and top with 1 cup of shredded mozzarella or pizza blend cheese. Bake, uncovered, another 10 minutes or until bubbly and ravioli is done.
