Does anyone know how to make whipped cream w/o dairy?!

Heavy cream is the only thing that will work. Sorry, but you're out of luck.

Making whipped cream without milkfat is difficult enough. It can be done (for example Kool whip) but it is difficult and you need special emulsifying equipment (a homogenizer will work but good luck finding one). However you are saying no dairy, which to me means not dairy solids either. Good luck with that. You need protein with certain film forming characteristics which casein happens to have. The film traps air in small bubble which is whipped cream. I don't know of any protein that will do that. I can tell you that the common proteins like soy, zein, gluten, will not work.

I suppose you would have to find a non dairy heavy "cream" in order to make whipped cream.
Perhaps soy milk or the non dairy creamer would work. I haven't tried using them, so I'm not sure how it would work. If you do decide to try it, make sure you use a cold metal bowl, and a whisk, add a pinch of sugar for some sweetness, a sugar subsitute may work too.

Whipped Cream Substitute


Ingredients:
1 Apple - grated
2 To 3 Tbl. sugar
1 Egg white

Beat all together until light. This makes an excellent substitute for
whipped cream.

I'm not sure if this will work, because i've never made it before, Try heating soymilk (the thickest creamiest soy milk you can find) and adding a bucketload of powdered gelatin and white sugar granules to it. Put it in a bowl and insert that bowl into a bigger bowl filled with cubes of ice and ice water. Get your electric hand whisk out (the one with the two beaters on the end) and go at that for a really really long time until the mixture has doubled in volume. Do NOT use too much soy milk or it wont happen... I'm lactose intolerant so i will definately try this out too.
