I'm in need of some great side dishes!?!


Question: I would love some new recipes for salad dressings! and just some new thoughts on sides I've tired of the same ones such as green bean with salt and pepper(some times with bacon or garlic) salad with store bought dressings ... you get the ideal. thank you so much for any help!

*************Dijon Green Beans

1-1/2 pounds fresh green beans, trimmed or 3 can of green beans
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
? teaspoon salt
? teaspoon pepper
1 cup of grape tomatoes, halved
? small red/ purple onion, sliced
2 tablespoons grated parmesan cheese

Place fresh beans in a large saucepan; cover with water. Bring to a boil. Cook, uncover, for 8-10 minutes or until crisp-tender. Or open canned green beans.

Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bow. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss a coat. Sprinkle with Parmesan cheese.

Roasted Green Beans With Peppers & Onion





1 lb. whole frozen or fresh green beans, ends trimmed
1 red pepper, cut into thin strips
1 yellow pepper, cut into thin strips
1 large onion, cut into thin strips
1/2 cup KRAFT Balsamic Vinaigrette Dressing
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese



PREHEAT oven to 400°F. Toss vegetables with dressing in large roasting pan.
BAKE 30 min. or until vegetables are tender, stirring after 15 min.
SPRINKLE with cheese. Bake an additional 2 to 3 min. or until cheese is melted.


~GREEN BEANS IN RED PEPPER BUTTER
1 red bell pepper, shredded 1/4 c. (1/2 stick) butter 1/4 c. onion 1 tbsp. lemon juice Salt and freshly ground pepper 2 lbs. green beans, washed and trimmed 1 tbsp. butter 1 red bell pepper, cored, seeded, cut julienne
For butter: Melt butter in medium saucepan over medium-high heat. Add shredded pepper and saute until crisp-tender. Transfer to platter with slotted spoon and set aside. Combine 1/4 cup butter with onion in food processor and mix well. Add sauteed peppers, lemon juice, salt and pepper; mix until smooth, about 30 seconds.
Bring 1 quart water to boil. Add beans and cook 8-10 minutes. Drain beans well. Ten minutes before serving, melt 1 tablespoon butter in large saucepan over medium-high heat. Add julienne peppers and saute 2 minutes. Reduce heat to low; add green beans and red pepper butter, stirring to blend well. Cover and simmer until beans are heated through. Serve immediately.

Squash Casserole: Boil 2 or 3 kinds of squash until desired tenderness (6 cups uncooked). Drain for 30 minutes as squash tends to hold water. Saute 1 onion. Grate 2 cups of cheese and mix with 2 cups of sour cream add onion and fold squash into mixture crunch up club crackers on top and bake at 350 for 20 minutes. Oh and salt & pepper to your liking. Enjoy this is really good and easy

In a pestle and mortar grind together freshly podded broad beans and peas (equal quantities) with a big handful of fresh mint...add a little olive oil and salt. Put the puree on toasted bread cut into small pieces. A small slice of strawberry on top.
Fry together in a little olive oil chopped pieces of pineapple (canned is fine) and good strong onions roughly chopped.
Add the little black seeds from 20 pods of green cardamon
(use a sharp knife to get them out. (that for a full pan full.)
Chopped pieces of bacon lightly fried then mixed with some good berry preserve (full fruit jam) Gooseberries, cranberries, blueberries all great.
Dice potatoes into cubes about half an inch across. Throw into slowly bubbling butter and fry slowly until golden. Mix with chopped parsley before serving.
Big, preferably wild mushrooms, sliced and slowly fried in a little olive oil, dressed with paprika and yogurt.
Tiny peas (petite pois) steamed with an equal volume of Cos Lettuce (or other strong tasting lettuce) chopped very small. This is called French Peas. Dress with fresh mint, lime juice.
Pieces of banana with a mint leaf, dipped in batter and deep fried for one minute just before eating.
