These chicken tenders turn out textured and crispy on the outside, with only as much spice as you (and your kids) like. And because they're baked instead of fried, they're a healthy alternative to the fast-food kind. RECIPE INGREDIENTS:
1 tablespoon canola oil
1 1/2 pounds chicken tenders (raw)
1 cup unbleached white flour
1 cup mashed potato flakes (we used Idaho Spuds)
1 teaspoon Creole or Cajun seasoning mix (optional)
1 teaspoon salt
1 teaspoon pepper
2 teaspoons ground oregano
1 teaspoon garlic powder
3/4 cup low-fat buttermilk
(regular milk can also be used)
1 large egg
Wooden skewers (soaked in water for 20 minutes)
Canola cooking spray
1. Heat the oven to 450°. Evenly coat a baking sheet with the tablespoon of canola oil. Rinse the chicken tenders, then pat them dry with paper towels; set them aside.

2. In a medium bowl, add the flour, mashed potato flakes, seasoning mix (if desired), salt, pepper, oregano, and garlic powder and stir to blend well. Add the buttermilk and egg in another medium bowl and beat with a fork or mixer until smooth.

3. Thread the chicken onto a soaked wooden skewer and dip each tender first in the flour mixture, then in the egg mixture, then back in the flour mixture. Wipe any stray coating off the skewer and place the tender on the prepared sheet. Repeat with the remaining chicken and let the coated pieces sit for 10 to 15 minutes.

4. Before baking, spray the tops generously with canola cooking spray. Your local supermarket is likely to carry a number of types of cooking spray, including varieties with canola oil or olive oil. All work by dispersing small droplets of oil over the cooking surface or food. The result is that you use far less oil than you would if you were simply coating a pan. But if these sprays are primarily oil, how can all this spraying really be calorie- and fat-free? The short answer: it isn't. A 1-second spray can add up to 7 calories and .7 gram of fat -- but that's still better than a tablespoon of oil, which adds 122 calories and 13.6 grams of fat.

5. Bake the chicken until the thickest part is cooked through and the coating is golden brown, 15 to 20 minutes, flipping after 10 minutes. Garnish with shaved carrot and a cherry tomato, if desired. Makes 4 to 6 servings.

In 'N Out

something new I tried is baking in oven sloppy joes. They are great on the baked bun.

How about home made taco's? If you have a family they can all help prepare dinner.
Or, do Chinese and eat on the floor if thats possible.

Try this...

Homemade Chili

2 Lbs ground beef (Brown in a pan and drain)
1 chopped onion (browned with the ground beef)
2 cans of Campbell's Tomato Soup
1 large can of red kidney beans (drained)
Chili Powder
Salt & Sugar to taste (Yep, sugar balances the flavor)

Put all together in a large pot and simmer for 1 hour. When done, serve on top of Fritos and top with cheddar cheese.

Fun, and easy.

********Meat filled Crescent ring:

Ingredients:
2 packages crescent rolls
1 lb. ground beef
1 envelope taco seasoning
1 cup grated cheddar cheese
shredded lettuce
chopped tomatoes
one bunch of green onions, chopped
1 diced avocado
1 cup sour cream
salsa
Method:
Brown ground beef and follow taco seasoning directions on back of package.
Add the cheese and place aside for the time being.
Unroll the two packages of crescent roll.
On a cookie sheet, place the crescent roll wedges in a circle, wide side of wedge towards the middle, pointed end towards the outside.
Place the ground beef on the crescent rolls and wrap the pointed ends of the rolls around the meat mixture, so that it forms a ring.
Bake at 375 F for approximately 12 minutes.
When baked remove from oven and place on a large platter.
On the inside of the ring place lettuce, tomatoes, onions, and avocados.
Dollop sour cream and salsa over all.
Cut into wedges and serve warm.

****** CHICKEN CRESCENT RING

2 pkg. 8 oz. refrigerated crescent rolls
? cup chopped red bell pepper
? cup chopped fresh broccoli
? cup drained and chopped water chestnuts
2 tablespoons chopped onion
1 cup (4 oz) shredded Colby jack cheese
1 can ( 5 oz) chunk chicken, drained and flaked
2/3 cup canned condensed cream of chicken soup

Preheat oven to 350 F. Unroll crescent dough; separate into triangles. Arrange triangles in circle on greased 14-inch pizza pan with wide ends overlapping in the center and points towards the outside. In large bowl, combine bell pepper, broccoli, water chestnuts, onion, cheese, chicken and soup. Scoop mixture evenly onto the widest end of each triangle. Bring outside points of triangles down over filling and tuck under wide ends of dough at center. (Filling will not be completely covered.) Bake 25-30 minutes or until golden brown.

are u a veggie person because if u are not then make your self a nice juicy hamburger!!!! ir chocolate ice cream!!!! thats always fun to make and yummy!!!

Pizza bagels are quick and easy to make and are good anytime. First take some bagels and toast them. Then sprinkle some olive oil onto them, and pour on some pasta sauce and sprinkle on some mozzarella. You can add garlic powder, oregano, parmesan, and salt if you like. Then stick it in the microwave for a few minutes to heat it all up, and voila.

Something fun and finger food like if you are bored. "scooby snack" type deals like barbeque smokies, cheese and crackers with sliced tomatoes and avacado sauce.
