Sauerkraut (aka pickled cabbage) has minimal nutrients, and some people get gas eating it, but it is delicious. I have it in my fridge at all times but have never looked to my sauerkraut for any health benefits.

cabbage is a cruciferous vegetable and is good for you, same family as broccoli

cabbage in general is good for digestion.....pickled or not....
beware....some can make you frequent the bathroom for awhile...don't plan any outings for a few hours afterwards.

I would have to agree with the good for digestion, no real nutritional benefit, no harm either. Just tasty.

PICKLED CABBAGE (KIMCHI)

1 head Chinese cabbage
1/2 c. salt for brine
1 tbsp. flour
1/4 c. water
1/4 c. to 1/2 c. fish sauce
2 tbsp. garlic, ground
1 tbsp. ginger, ground
1/2 c. onion, ground
1-2 tbsp. sugar
1/2 c. green onion cut in 1-inch slices
Salt to taste
Radish, optional

Cut cabbage in 1-inch squares. Sprinkle 1/2 cup salt over the cabbage. Set aside for 2 or 3 hours then wash and drain. Make a paste of flour and water and cook until thick. Combine with rest of the ingredients.
Place mixture into a jar, set aside for 2 days at room temperature and then store in the refrigerator.

Yes. Korean Kimchi is a perfect example. Although high in sodium, it is rich in Vitamin C and fibers.

I keep several cans of saurkraut in my cupboard. Sometimes I just open the can and eat some.My daughter will usually finish off what i dont. Yes, can cause gas. But cabbage is good for you.

Sauerkraut is good for you - it is not necessarily "pickled", it is actually fermented. It is the healthy bacterias that cause the fermentation process, preserve the cabbage and aid in digestion.

Unless you are up to going to the trouble of making your own, I would suggest looking for a good quality, unpasteurized Sauerkraut. The only ingredients should be cabbage, salt and water.
