a frying chicken, usually a hen, that has been quartered and cut up by the meat cutters..as opposed to a "whole" chicken, cut up would be just that...everything, legs, wings, etc. cut off of the body of the chicken..

A chicken weighing 2-3 pounds cut into usually 8 pieces for frying.

A 'cut up fryer' first a young chicken/hen - that is the definition of a fryer. To be cut up is to have had the chicken's wings, legs and thighs removed from the body and to have the breasts split into two. You can save a lot of money by buying a whole chicken and cutting it up yourself. To do this, first you split the chicken in half by cutting through both the breast bone and the backbone - now you have chicken halves. Next, detach the wings, them remove the legs where the thighs meet the breasts - you can see this joint by pulling the leg straight. Lastly, bend the leg and thigh at the joint and cut through at the joint separating the leg from the thigh. Do all of this with a sturdy, sharp knife - I use my boning knife. Now you have a cut-up chicken.

That means a whole chicken divided (cut up) into pieces small enough to be ready to dredge in flour and fry.

Its a frying chicken cut up into pieces. Its like you buy a whole chicken and cut all the parts yourself.
Instead of buying chicken parts, ( breast, thighs, legs, wings), in individual packages....

Ditto,Have you tried buying a whole fryer lately? Not as easy as it used to be.I have to drive an extra 8 miles to a meat market that has whole fryers
