Fried chicken, mashed potatoes and a tossed salad

BBQ Chicken and Black Bean Burritos

? 1 (15 ounce) can black beans
? 1 tsp olive oil
? ? tsp garlic powder
? ? tsp coriander

? 12 ounces chicken (white or dark meat)
? 1 Medium onion, chopped
? 1 tablespoon olive oil
? 6 ounces BBQ sauce
? 8 ounces pepper Jack cheese, shredded, divided
? 6 10 inch flour tortillas

Drain and rinse beans. Heat beans with garlic and coriander in olive oil, set aside.
Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes. Let cool, then shred with fingers. Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent. Add Shredded chicken and BBQ sauce, stir fry until well blended.
Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos. Place in baking dish spray lightly with PAM (helps keep burritos from drying out).
Heat in 350 degree oven for 10 – 15 minutes, 20 minutes if refrigerated. Sprinkle remaining cheese on top and heat another 5 minutes.

Take out!

How about goulash. Fry the hamburg, sweet sausage, onions and peppers in pan. Put onion, garlic, and soul food powders in. Cook until brown. Drain. Add can of crushed tomatoes, tomatoe sauce, and stewed tomatoes. If you want add jar sauce. Cook elbows, drain and mix elbows in sauce. You could also make what my family calls Brian stritsal. Brown some hamburg and drain. In a 9 by 13 cake pan put 2 cans of vegetable beef soup on the bottom, cover soup mixture with hamburg mixture, then cover the hamburg mixture with mashed potatoes. Place a couple dabs of butter on top bake in over on 350 until brown. We don't use measurements in my family we just dump stuff in.
