Can I use Ground Pork?!


Question: Can I use ground pork sausage in my stroganoff, instead of ground beef ? I dont have any ground beef, its too cold and windy and snowing to take my 5 year old out to the store to get any, and All i have is sausage, Chicken and brats in the Freezer.

Sure, use what you have. Some of us older folks have always cooked with what we have because there was a time when there was only 1 car to a family and you just couldn't go to the store when a recipe called for something you didn't have.

You would be best off using the chicken diced or shredded up. The pork, even if drained along with the ingredients for stroganoff will make it "slick" feeling in your mouth and barely palatable. Defrost the Chicken. Boil a pot of water twice the capacity of the chicken size (like 3 cups of chicken, boil 6 cups of water). Once at a rolling boil, put the chicken pieces into the water and return to a rolling boil. Turn off (yes off) the burner and let the chicken cook in the water for 1 hour. You will have perfect chicken to use in your recipe. If you want the chicken flavored in some manner, you can add flavorings to the water (soy, garlic, chopped onions, salt, ground pepper-whatever)

Certainly.............I would use the sausage myself, but then it wouldn't really be Stroganoff, but using ground pork won't be either. Use what you have, experiment and then you can brag to your family that this is an original dish from YOU! I've substituted many a protein for another being here in snowy Ohio when the weather wasn't cooperating either and it's come out just fine! Go for it!!!!!!!!!!
P. S. Ground Pork does lack in different flavor properties than ground beef so may I suggest bumping up your seasonings a bit to offset the dryness that the pork may have, plus pork tends to be more lean, and that alone will soak up your flavors more. Good Luck!

It will taste more like sausage gravy- but served over noodles should be really great anyway!
